Easy Vegan Whole Grain Pancakes

Reviewed: Sep. 1, 2008
These were pretty tasty, I used regular flour and added some wheat bran since I was out of whole wheat. I added chocolate chips as well, mmmmm...

Homemade Black Bean Veggie Burgers

Reviewed: Aug. 16, 2008
I'm eating my burger right now and it is delish! I followed the recommendations to dry the beans and onions, and that may have helped mine stay together. I also threw in some veggie crumbles and oatmeal. I didn't have to chill before baking, but this probably have helped the burgers firm up a little more. Definitely try this recipe!

Salmon Croquettes

Reviewed: Aug. 4, 2008
These were tasty and so easy! I added some old bay since one of the reviews mentioned that they were a bit bland. I used dried dill as well, about 1 tsp's worth. I felt like I could have added more since the dill flavor was still pretty subtle. Fresh would probably give it more of a kick.

Chickpeas in Tomato Sauce With Feta and Wine

Reviewed: Jul. 23, 2008
Really easy and very tasty! I used a Riesling and it had a really nice flavor. I also added some cubes of tofu for extra protein. Also, the tomatoes I used had garlic and oregano already in them, and I added some rosemary to it. I didn't have any onion and it still turned out great.

Chocolate Strawberries

Reviewed: Apr. 10, 2008
Very good, make sure to dry them off before dipping them! I haven't had a chance to directly compare with a recipe using shortening, but I don't think that it would be necessary to add it...just extra fat that you don't really need.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jan. 1, 2008
These are amazing! After smelling the first batch in the oven, I went downstairs to find my brother baking (I guess I didn't get all of the baking genes in the family)! He'd used chocolate pudding (didn't really affect the taste that much), and put dark and white chocolate chips in. I added some coconut and walnuts to the rest of the cookie dough, they are heavenly!

Herbed Deviled Eggs

Reviewed: Sep. 23, 2007
These were pretty good! I had to add some extra mustard and salt and pepper to taste to give it a bit more flavor, but this may be because I had to use dried parsley and tarragon, and I may not have used enough of these two. I really like the recipe though, and the use of yogurt lowers the fat content (which is always a plus).

Very tasty and moist! I replaced all of the oil with applesauce and made muffins (baked about 30 min) and they turned out great!

Lacy Oatmeal Cookies

These just started coming out of the oven and they are sooo good! As one reviewer mentioned, you must wait until they cool to peel off of the foil!!! Otherwise it is a crumbly mess. (but still tasty) Will make again, I bet they're delicious with melted chocolate but I don't have any chocolate chips at the moment.

Tasty! I halved the topping and pured it on top of sliced Granny Smith apples that had been tossed with cinnamon and nutmeg.

Butter Dip Breadsticks

Reviewed: Aug. 2, 2007
Very tasty! I agree, they're more biscuity than true breadsticks, but they're easy and good! I rolled mine in wheat bran and sesame seeds, and gently dabbed some olive oil along the top of each before putting them in the oven. I didn't use the butter at all, and baked for 10 min.

Easy Veggie Samosas

Reviewed: Jul. 24, 2007
I made a bunch of changes, but used the same overall idea of the recipe, which is why I'm still rating it. I thawed some frozen mixed vegetables (carrots, broccoli, corn) and added some celery and mushrooms to the garbanzo mixture. I used curry paste still, and sauteed some green onions in oil with the paste before mixing everything else. I added some cumin, chili powder, and salt. After cooking a little to heat everything through, I spooned onto strips of phyllo dough (2 layers thick) and rolled up in triangles. I baked at 350 for 15 minutes and they came out really tasty!

I also used the suggestions of adding water and butter (I did 1 T of each). I also greased the pan a few times in between. Everyone liked how they tasted, though they didn't all turn out perfectly!

Didn't need so much oil to saute the onions, 1/4 cup probably would have been fine. They turned out good though!

Black Bean Spinach Pizza

Reviewed: Jul. 7, 2007
I really liked the recipe, I changed it a bit by omitting the salsa (I used diced tomatoes instead) and adding mushrooms instead of spinach. I also didn't bother to mash the beans, and sauteed the onions and garlic, then added the diced tomatoes and spices and heated gently for 5 min. Turned out great!
