Spiced Sweet Roasted Red Pepper Hummus
This is the ONLY hummus recipe you will need. It tastes even better than the hummus that you buy at the supermarket in an 8 oz yellow container at a fraction of its price. I use a fresh red pepper and it's much cheaper. I grill it right on my toaster oven rack and then peel off the skin and chop it up a little before adding it in. I like it a little chunky, so I usually add the pepper last and I only chop it a little more in the food processor.

Beth's Spicy Oatmeal Raisin Cookies
This was a great recipe! Even though I forgot the baking soda (oops) and omitted the raisins (don't like them) it still came out amazing. My suggestion for those who had difficulty with their cookies breaking apart: make thicker cookies. My thinner cookies were a tad crumbly, but my thicker cookies were perfect! My husband and I scarfed half a recipe down in two days. This recipe is a keeper!

Broccoli Soup II
I'm always looking for good recipes that don't use milk, since my husband is lactose intolerant, and can't do straight milk in a recipe. This recipe hit the spot. I added a little extra cheese, and a dash of oregano, pepper, and cayenne pepper. I cut the green part off of the green onions and put it on top of the soup and put the white part in with the garlic. A nice thick soup!
