Beef Goulash Soup
This is amazing! I am pleasantly surprised at how good this soup is. I made it in the crockpot yesterday to have something in the fridge for meals for the weekend. Today, I'm having my first bowl, which is reheated. I cannot believe the layers of flavors in this soup. It is definitely not your ordinary, boring soup, by any means. When I crockpotted it, I cooked in stages: meat first, then added spices, then added potatoes/carrots and added the peppers at the end so they wouldn't over cook. This is very, very good you guys. I urge you to try this recipe.

Chili Rellenos Casserole
This was really, really, really, really good. Really good. Can you tell I liked it? I messed up though. It didn't look like it was going to be much, so I added extra milk but only one extra egg, so it was runny in the center. We'll eat the outside, though. lol I used Enchilada sauce. This was one of the easiest things to make. My husband loves Mexican food, so is very happy I made this. I will make this often. Thank you!

Tangy Four-Bean Salad
This was really, really good. Almost addictive! I used fresh herbs, because I'm always looking for reasons to use my herb garden and was very liberal with the basil. The amazing part is how the flavors blend. I used green beans, chickpeas, kidney beans and black beans. Found a can of hearts of palm, diced it up and threw that in, as well. This is very versatile and like I said, quite addictive. Crunchy, sweet, tangy and with the hearts of palm, a little tart, too. Thanks for this wonderful recipe. It will be my "staple" bean salad recipe from now on.
