Connie's Zucchini 'Crab' Cakes
These were okay, but not great. Tasted *nothing* like crab. They'd be good served as a vegetable side, but I don't think they're hearty enough to serve as a main dish.

Scallops Mascarpone
Excellent, excellent, excellent! GREAT way to make a more stable "creamy" sauce. Only change I made was using fresh onions instead of powder, and adding some shrimp!

Fluffy Pancakes
These were very good. I did have to add a bit more flour for ours. Some people prefer their pancakes thin, some thick, so it's really a matter of preference. I let the batter sit for about ten minutes in the fridge before I made them, and I think that made a huge difference as far as fluffiness.
