Rice Pudding
This is one of the only rice pudding recipes I've seen with cooked rice, which is great for leftovers. I cut way back on the milk and a little on the sugar. It was very nice.

Yam Casserole
I made this for thanksgiving. All 18 people there loved it even those who thought they didn't like sweet potatoes. I make this with sweet potatoes. I microwave them and scoop out the inside and mash. I also cut back on the sugar in the casserole part. Really delicious!

Hot Artichoke and Spinach Dip II
I've made this recipe several times now and it always gets rave reviews. I use more spinach (a 10 oz package of frozen, thawed)and more garlic instead of the garlic salt. It's great with crackers or thin slices of french bread .
