Mexican Rice Pilaf
I make this recipe once a week and serve it with something else for dinner (eg quiche, vegetable kebabs, stuffed capsicums etc). I like to use brown rice instead of white as it is so much healthier and this is the only recipe I have come accross that makes brown rice tasty! I think the grated cheese is the secret. My husband loves it too and doesnt dread any more when I say we are having brown rice tonight!

Roasted Garlic Cauliflower
so unbelievable delicious. I dont like cauliflower boiled, or steamed, but roasted with the garlic is amazing. 5 stars - so easy and healthy.

Arangini (Italian Rice Balls)
absolutely divine - can't go wrong with following this recipe to the letter. It is time consuming - but well worth the effort and would be sure to impress! The rice took at least 30 min to cool before I could proceed with the next step, so make sure you get the rice happening before you do anything else.
