About this Cook
I am the Owner / Executive Chef of Whispering Pines Caterers since 1987.Which I run with my Sweetheart, Debbie and my Daughter, Jennifer. I basically grew up in a kitchen, my mom was always cooking or baking something delicious. Mom never bought anything, everthing was home made and it kind of rubbed off on me.

My favorite family cooking traditions
Christmas Eve is very special to me I can remember the bounty of Italian specialties, from Seafood Copinno and Antipasto to Stuffed Grape Leaves; Mom and Dad would prepare this huge extensive array of food for my brother Matt and sister Denise and myself, we would eat for hours. This my friends, is something I still carry on to this day.

It's great to see the look on peoples faces when they enjoy the food I've prepared for them. I Love to introduce new and different foods to people.

Turkey Mercedes
Good on the Cuban twist but remember this if you keep basting the turkey every 30-40 min you won't have a really crispy skin...I know I know the cardiologist says NO SKIN but ya know what they eat it they just don't tell us about it...one more thing make sure you marinate the turkey in a non-reactive vessel... that means glass or stainless steel as aluminum and citrus is toxic

Apple Stuffed Chicken Breast
Try using apple juice instead of the stock it will give you a sweeter ending and then you can thicken it with arrowroot slurry and keep a clearer sauce

Slow Cooker Tender and Yummy Round Steak
this is a good easy to bang out recipe, for all the hunters , this is good for bear or venison as well.
