Country Pumpkin Muffins

made a half batch (12 regular-sized muffins) and left out the raisins/walnuts. these were very easy and came out tasting pretty well. i would maybe use a little less cloves and a little more cinnamon, but that's just my preference. swapped out the oil for unsweetened applesauce and used a little less sugar than it called for.

Sloppy Joes

we loved this. i used ground turkey and i cut the brown sugar by a quarter. also, i didn't have an onion so i used a little extra onion powder, and i ran out of a BBQ sauce so ended up using about 3/4 as much as listed. i also added a small splash of liquid smoke. will definitely make this again.

Orange Muffins

made this as directed but used 2 tsp orange zest. it was orangey enough but not very sweet. sprinkled a few with an OJ/powdered sugar mix to see if it would sweeten it, but we decided we liked the original better. still yummy but just know they won't be very sweet.

Pan Seared Lemon Tilapia with Parmesan Pasta

we liked the pasta a lot but the tilapia wasn't great. however, i did omit the cilantro (didn't have any) and these fillets tasted particularly fishy, so it may not be the recipe's fault.

Salmon Fillets with Creamy Dill

this was good but there was way too much sauce. i used light mayo and used as much mayo as mustard. even then i could have reduced the sauce by half. someone suggested leaving the sauce on the side and this is a good idea ... you can control how much you use.

i cut the sugar to 1/2 cup and added it while boiling the water. i also used regular-flavored tea bags (although i'm sure orange pekoe would be divine). very good!

i agree that the salmon NEEDS to be drained. (however, i didn't realize it was only supposed to make 4 patties. i formed 8. maybe that's why they were mushy?) great taste ... i used penzey's black and red pepper to get a little cayenne in there.

Delicious Baked Chicken

easy and delicious. i made this with boneless, skinless breasts. instead of rubbing with oil, i sprayed them with cooking spray. this is also good served cold the next day. would be good over a salad.

Oven Roasted Potatoes

i used 4.5 (one was small) yukon potatoes, cut them into smaller pieces w/ skin on, added them to a ziploc with the oil and the spices, and then mixed. i actually just used penzey's seasoned salt, which had all of the spices listed in this recipe, but unfortunately, i used way too much -- 4 tsp. it was quite salty (my own fault for just adding up the other quantities on the original). next time i'd use 2 tsp. and go from there. despite being too salty, they were fantastic and the original recipe is probably perfect.

Breaded, Fried, Softly Spiced Tofu

this was tasty but salty. i'd probably omit the salt next time. i used herbes de provence instead of sage. also, i used penzey's black and red (black pepper and cayenne), just 1/2 tsp total. it still had quite a kick. i omitted the yeast as well (didn't have any). served with steamed broccoli.

Easy Deviled Chicken

i messed up this recipe and it still came out great. first of all, i scaled it down for 2 servings. it cooked for about a half hour. i forgot to grease the baking dish (still came out fine) and forgot to season with salt/pepper (added at the end). i took the advice of warming the dish first (didn't help) and using corn flakes (was great!) i also eyeballed the dijon mustard, adding a tiny bit more. we both enjoyed it.

Cider Vinegar Chicken

i did not like this at all. it wasn't because of the vinegar but because of an overall blandness. my husband salvaged his piece with lots of extra garlic salt. i won't be making this again. it might be better on other parts of the chicken but the breasts were just too bland.

Banana Crumb Muffins

these were yummy but they did stick to the muffin liners, despite what some others have stated. mine were done after about 15 minutes and i hadn't put the topping on yet, so i turned off the oven, put the topping on, then put them back in the oven and let them sit for 3 minutes or so. also, i used oil instead of butter as some suggested, and i added extra cinnamon because i love cinnamon!

Fantastic Black Bean Chili

loved it. changes: i used 28 oz. of crushed tomatoes, a small can of sweet corn, a shake or two of cumin, and doubled the chili powder. i subbed kidney beans for one of the cans of black beans (just for variety). this made probably 7 or 8 large servings.

Healthy Turkey Loaf

i doubled the recipe as was suggested and added a handful of shredded carrots. it was great! very easy. i made it in a loaf pan in the toaster oven, 350 for 40 minutes. also, i omitted the red pepper (the ones at the store looked gross) and doubled the yellow. next time i'll try leaving out 1 egg.

Honey Baked Chicken II

made a combo of the suggestions here. i used 3 boneless, skinless breasts. i reduced the margarine by half and used smart balance. i used dijon instead of regular mustard. i used one teaspoon of curry and 1/2 a teaspoon of garam masala. i omitted the salt. baked 30 mins covered with foil, then 20 uncovered. it was fab! served with brown rice and a salad.
