Cranberry Pecan Salad

i've had this in my recipe box for a long time, and i finally got the chance to make it! i used gorgonzola cheese, raspberry balsamic vinegar, added sliced granny smith apples, and left out the red onion. made it for a dinner party and it went fast!! the dressing was to die for! i served it with pumpkin risotto and balsamic sage chicken...yummy :)

Autumn Harvest Cookies

These were exactly what I was craving! Very delicious! My roommates and I are enjoying them a lot. I used apple pie spice instead of pumpkin pie spice because that is what I had and they turned out great! I will probably have to make a new batch in a couple days...these are going fast!

Zucchini Risotto

i love risotto, and this was a very good flavor combination! but 1/2 of a zucchini is definitely not enough!! i used a whole zucchini plus some yellow squash. i added the sun dried tomatoes about half way through cooking so that they would flavor the rice more. i also doubled the cheese (i used freshly shaved asiago) because I love cheese :) but it tasted pretty flavorful before i added the cheese, so you can definitely leave out the cheese or use less if you are trying to reduce fat. i made this today for my mom's birthday and she loved it!

Zucchini Yogurt Multigrain Muffins

These are delicious! I used vanilla yogurt and cinnamon flavored applesauce because that is what I had, so I omitted the white sugar (but still used the honey). Perfect amount of sweetness! I also added some dried cranberries, which go really well in these muffins! I think next time I will do a cup of dried cranberries and raisins (I like golden raisins) and maybe some other dried fruits, too (apricot?). I also may add more shredded carrots and omit the pecans. Thank you, this recipe is really fun to play with!

I'm sorry, but this cake did not work for me. It came out bland and spongy. I even added more cocoa powder as people suggested. Won't make again.

Salmon Avocado Salad

This was so delicious! The only changes I made were I omitted the mushrooms, used a baby greens salad mix, and used red wine vinegar instead of white vinegar. This was very fast to prepare and the flavors went together very well. I can't wait to make it again. Thank you for a great recipe!

Cranberry Wheat Bread

Wow. This is the best bread I have ever eaten! I have had it every morning for breakfast, and now I'm making another loaf. It is even more wonderful if you add 1/2 of pecan pieces with the cranberries. I could eat nothing else but this bread for the rest of my life and be very happy.

Pork Chop and Feta Skillet

This was delicious and very easy! I used fresh rosemary and basil instead of dried, which was wonderful, but I think it's the feta cheese really makes the dish. I only had two lemons (not nearly 1 cup of juice), but it was plenty. I served it with roasted potatoes, grape tomatoes, and asparagus. I would definitely make this again :)

Award Winning Soft Chocolate Chip Cookies

yum! my cookies just came out of the oven and they are delicious! i feel like a lot of cookie recipes come out too flat, but these are perfect. I was really nervous when i was making the dough because i thought the pudding mix made it taste too sweet, but the cookies taste great! I also sprinkled some cinnamon on them before putting them in the oven. The only reason I didn't give 5 stars is because i think i would prefer them with oats in them. And maybe next time I will add more walnuts. Thanks for a great and easy recipe!

Strawberry Dream Cake I

The cake was pretty good, but I liked just dipping fresh strawberries in the icing even better! I had trouble with the cream cheese being clumpy, but that's probably because I just using a fork to mix it (I don't really have a lot of kitchen supplies). Overall, the cake was fun to make/decorate and I would probably make it again.

Chocolate Eclair Dessert

Oh, this was AMAZING and sooo easy too!! We made it with cinnamon graham crackers and cheesecake flavored pudding mix. We also melted the chocolate frosting in the microwave and poured it on top of the dessert...yum! Breaking the graham crackers into squares makes it easier to serve. We made it in the dorm, and it didn't make that much of a mess :)
