Barbie's Tuna Salad
Delicious--also tasted great after a few days in the fridge because the spices all came together. I agree it's easier (and better) to eye the ingredients and add more/less of what you like. In addition, hard boiled eggs and/or little noodles add a great more salad-y treat. It also tastes great on a croissant as a fantastic light lunch.

Broiled Tilapia Parmesan
Very delicious, VERY QUICK AND EASY. My changes: I seasoned the fish with garlic salt and oregno when broiling them for the first time. I also didn't have a broiling pan handy and an aluminum foil covered shallow metal dish worked perfectly. I would make a little extra sauce next time, if you actually are using 2 lbs of fillets (which we were).

Autumn Cheesecake
Excellent cheesecake and very easy to make. My changes: 1. Doubled the ingredients for the filling. 2. Doubled the crust and used a little less than half for a crumb topping. (I put some crumb topping on top when it initially went in the oven and then when there were 10-15 minutes left I added the rest.) 3. Microwaved the apples to remove the excess juice.
