Overnight Apple Cinnamon French Toast

This was actually quite delicious, even though I looked away from the broiler for a split second and it started to burn. I quickly took it out and since it is served inverted it was just fine. This is a very rich dish.

Mediterranean Black Olive Bread

This was delicious! I adjusted this recipe for the bread machine (needed only to add the vital wheat gluten, all other measurements were fine.) And the bread was wonderful. I will experiement with different olives next time, I used kalamata this time.

Extreme Banana Nut Bread 'EBNB'

This was extremely delicious, and it did taste better the next day after refrigerating, the flavors melded together very well. But I won't be able to make it very often due to health and diet considerations. I'll keep looking for healthier BNB options.

Artichoke Hearts au Gratin

This dish was super simple to make, and very yummy to eat. I used marinated artichokes, so I eliminated the italian dressing. I will certainly make this dish again. I think it would work really well as an appetizer, or buffet dish.

Red Wine Flavored Beef

Incredibly flavorful, easy to make, we enjoyed it immensely, even our 15 year old picky eater! We did add mushrooms and thyme, more wine, water, and a whole pkg of soup mix. We thought it was important to use a good quality wine like the Cab Franc we chose, and the roast was wonderful. We thickened the broth with corn starch and water for a wonderful gravy, and served it over egg noodles. We'll definitely make this again.

Honey Glazed Carrots

We loved the flavor, very different from plain glazed carrots, and much tastier. They took quite a bit longer to cook than the recipe called for, and were still a little too crispy. I'll try covering them with a lid while cooking. I even cooked these at 350 , and left them in while another dish cooked at 425 for 10 minutes.

Artichoke Chicken

This was awesome, and we enjoyed it immensely. I used marinated artichoke hearts (because that's what I had here) and the dish was just superb. I don't know if it would have been quite as good with water-packed artichokes. Either way, this was great, easy to prepare, yet something I would gladly serve to guests. Perfect for do-ahead, prepare all the way up to the baking, refrigerate, so all that's needed is to pop it in the oven later on.

Mushroom Onion Rice

This dish was delicious, and very easy to make. I would have liked it to have a little more onion and beef flavor, but the slight blandness of the dish actually worked well with the very rich and strong flavors of the entree I served. I'll make this again, it's a perfect accompaniment to strongly flavored entrees. If I make this with a bland entree, I'll add more seasoning/flavor/onion to give it some punch.

Beezie's Black Bean Soup

Delicious soup, and easy to prepare. I added some diced ham when I added the vegetables. I found that the rice needed more than 20 minutes to cook though. I will probably reduce the jalepeno a little next time as it was a little too much for my son, although we loved it as is! Very yummy.
