Easter Egg Nests

We made these cute nests last Easter. I used white chocolate chips. The project was perfect to do with my then-3-1/2 year old. We will make them again this year. The nests are quite small if made according to the recipe, so be sure to look for mini-jelly beans to fill the nest.

Refried Beans Without the Refry

These beans have become a standard dish in our house. I cook them at least once per week. Everyone likes them, including the baby and the super-picky 4-year-old. They are so simple and quick to throw together into the slow cooker. Prep takes me under 5 minutes. The beans freeze well too.

Coconut Tofu Keema

This recipe is really delicious and so easy. I used bagged matchstick carrots so the prep was very fast. The flavor is excellent and matures even more as leftovers. Made an excellent dish to go with curried vegetables and rice.

Bean Soup With Kale

This soup is so good, and so easy. Often a batch only lasts one day around here, as it is eaten for lunch, snacks, and dinner. I use vegetable bullion instead of chicken stock, otherwise I follow the recipe as written.
