Eggplant Rollatini
Instead of frying, I baked the eggplant slices after breading in a 375 oven until light brown. I was able to roll them right after they came out of the oven. The kids had fun helping me make it!

Ricotta Cheese Cookies
Really, really, good. I tweeked it by using half all purpose and half oat flour. I didn't frost it, I added mini chocolate chips to the dough. They are a perfect not too sweet cookie.

Pumpkin Pie II
It was tasty with just 1 1/2 cups of sugar. Mine took an extra 15 minutes to cook.
