Strawberry Cake I
I <3 this cake! I baked it first for my mom's birthday, and I thought it was so delicious that I baked it again as cupcakes for my sister's baby shower. Guests DEVOURED 'em. My parents and I aren't big fans of icing, so we had the cake by itself and it was still delicious! I used frosting for my sister's baby shower and placed sliced strawberries on top of each cupcake. I actually prefer the no frosting... lol. I made a couple changes -- I use french vanilla cake mix, I only use half of the required gelatin (so 1.5 ounce), replace the oil with unsweetened apple sauce, use 2 eggs and 2 egg whites, 1 1/2 cups finely diced fresh strawberries, and substitute the buttermilk if I have to. Thanks for this wonderful recipe! :o)

Homemade Black Bean Veggie Burgers
These were ok. My friends and I are trying to eat healthier, so we thought we'd try 'em out. There was something off about the taste..... maybe it was the cumin? Maybe it was because it was too bland? We don't know... my one friend didn't finish his burger... another friend and I piled on mustard and ketchup to make up for the blandness/cover up the off taste. It was really crumbly, too... I wish I read the other reviews first about adding one more egg. Oh well; I believe this recipe still has potential. I'm going to try again, but use this as a base... I'll add my own spices and twists to it. Thanks anyway!

Oatmeal Waffles
These were tasty! They cooked up surprisingly pretty fluffy, considering they were kinda heavy/dense. I was full with just one, so it was perfect for a hearty, on-the-go breakfast. I'm happy with the health benefit of the oats. I'm not a big butter fan so I reduced the amount by half (3 Tbsp). I got 4 big waffles out of the batter, so I'm freezing the leftovers to pop in the toaster whenever I want 'em. Thanks for the recipe!!!! Yumm-o.
