About this Cook
Happily married to my best friend, retired, grandmother of three granddaughters and one grandson.
My favorite things to cook
I love to bake, but since my husband and I are both now diabetic, I have had to learn to bake a totally different way.

Sugar-Free Frosting
What a great recipe, thanks for posting it! My husband and I are both diabetics. He thought his days of frosted cakes was over. I made a diabetic carrot cake today and used this icing. It was sooooo good. I did use less milk after reading the other reviews on here, about 3/4 a cup.

Banana Crumb Muffins
Wow! This is excellent. These melt in your mouth! I did add vanilla, a dash of nutmeg and a bit of cinnamon to the batter. And for the steusel topping I used oatmeal instead of flour, I added brown sugar, pecans, butter, and pulverized it in a food processor.

Scrumptious Sweet Potato Casserole
When I first made this my husband said "I don't eat sweet potatoes like that, I like mine with marshmallows." Then he tasted these. Now, he likes his "like this". Great recipe, excellent taste!
