Thin Mint Crackers

Reviewed: Dec. 16, 2009
I am amazed at how easy and delicious! I used Andes Thin Mints baking chips and mixed them with some milk chocolate chips to melt. Delicious! I also tried a layer of peanut butter on the cracker then milk chocolate. ALso delicious. I think the slight salt taste compliments well. Topped the minkt with a bit of crushed candy cane and peanut butter with a few peanut butter chips. Looked and tasted great. THese are a new easy favorite! I'm going to put them in my christmas goodie bags :)

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 3, 2009
perfect for ornaments. I cooked for 9 min. and they became perfectly hard. Just make sure to poke a hole in it before you bake!! :) As far as taste, I give them a 4 star. Classic ginger bread, but a bit too bitter? maybe. Too strong for me, Not my favorite gingerbread taste. But recipe is as it says it is!

Fluffy Hot Chocolate

Awesome! I used lactose free milk for my husband and son to enjoy some completely lactose free hot chocolate! I put a dash of almond extract to the vanilla for a delicious flavor addition.

Crunchy Tuna Turnovers

Reviewed: Nov. 16, 2009
I don't like this tuna filling, so I just made my usual with mayo, dill, mustard, and parmesan and made them in the potato chip encrusted biscuits. I like the biscuit with crunch.

soy milk also works perfectly too. I always add vanilla and sometimes 1 tb of sugar. We prefer to use 2 pie tins and not a 13x9 or 9x9 because we love the buttery, crusty edges. This is really yummy with traditional lemon, syrup and pow. sugar, or is really good with honey butter.

Stuffed Shells IV

Reviewed: Nov. 1, 2009
I used beef instead of turkey. as is 4 star. after tasting I added oregano, thyme and touch of basil to season. I also mixed in a little of the spag. sauce to the meat/cheese mixture. I love that it contains spinach, and you can't taste it. I vacuum sealed the extra and froze them for later (just without the sauce on top, I will do that when ready to eat) They are very yummy.

great chewy texture and taste. I added all ingredients in my bread machine to mix, then let it rise in a bowl. I ended up adding at least another cup of flour though. It was very sticky at first.

Roast Potatoes

very good. I cut pretty small and they were crispy after about 30 min. I used seasoned salt on the potatoes instead of regular. Does not need other spices/seasoning, in my opinion. the rosemary was very flavorful.

Daniel Boone's Favorite Honey-Fried Chicken

Reviewed: May 26, 2009
Yummy! I just used oil instead of melted shortening, but followed the process perfectly. I added seasoned salt in the flour and no cayene (preference). LOVE the crispy-sticky honey on the cooked fried chicken. Cook the chicken until barely cooked so it doesn't over cook when you add honey and finish cooking.

i just use milk (not fat free) instead of cream, and then add about 1/2 cup of chopped sharp cheddar. :) if you don't have chives finely chopped green onion works well too. Oh and I don't drain the bacon... it adds flavor.

so versatile with different pudding mixes, and always moist! I tried pistachio pudding with toffee bits and it was great! I used vanilla pudding and put oats in place of 1/2 the flour, also so good. I am going to make chocolate with peanut butter chips today. LOVE IT!
