Mom's Zucchini Bread

Only 2c of sugar - 1c white and 1c brown - is plenty sweet. Also, this recipe lends itself to more zucchini. I added more than 3c and it was delicious. This stuff melts in your mouth!

Easiest Peanut Butter Fudge

I went with the changes in the review of 3 cups confectioners, 2 cups brown, and 1 cup peanut butter. Very creamy and easy! Beware though, it is VERY sweet! I start timing at an early boil, before the rolling stage and it comes out perfect. Lining the pan with Saran wrap is a brilliant idea, and gives the fudge a perfect smooth top.

Strawberry Angel Food Dessert

This is fantastic! I used french vanilla box cake, 2lbs of strawberries, 3/4 cup sugar, and only 13oz of glaze. It got attacked at the party I took it to. My advice: Make your own glaze. The store bought stuff was nasty.

Chewy Chocolate Chip Oatmeal Cookies

Some of mine came out a little flat the first time, as others have mentioned. I refrigerated the dough for about a half hour and made sure not to over-beat the next time around and these fluffy cookies were YUM.

Honey Mustard Dressing II

So few ingredients make for a fantastic dressing. I use fat free mayo in this dressing every once in awhile and the texture isn't as great but the taste isn't sacrificed at all.

No Bake Peanut Butter Pie

This is unbelievable. I put it in an oreo crust, which I would definitely recommend. This does not take even close to how much whipped topping it asks for, so feel free to use between half and three-quarters the listed amount. SO SO good.

California Grilled Veggie Sandwich

This was quite good. I have used eggplant, onions, bell peppers, zucchini, and squash in this sandwich before. I'm not so sure about the spread but everybody else seemed to love it! Without a doubt, I will make this one again.

Mexican Bean Salad

Oh this is good. Changes: - No corn (don't like it) - 1/4 cup olive oil, 1/4 cup red wine vinegar - 1/2 tbsp salt - double the cumin - 2 green bell peppers (just didn't have any red in the house) YUM.

Old Fashioned Coconut Cream Pie

This recipe was fantastic! I wasn't the largest fan but that's because I don't love cream pies. Everybody else raved. I made the same changes that everybody else made (swapping half of the half-and-half for coconut milk and the flour for 1/3 cup of cornstarch). I used an entire package of unsweetened frozen coconut in the filling not toasted and then used the toasted sweetened stuff on top. It was beautiful AND delicious!

Iced Pumpkin Cookies

These were delicious. I didn't love that the texture was cake-like but I went in expecting that and it would be wrong to complain about the taste. You definitely need the icing for sweetness and presentation. I'm sure I will make these again!

Raspberry Topped Lemon Pie

This was fantastic. I'm not a fan of whipped topping but I knew the raspberries would be sour so while they were on the saucepan, I added sugar so that they were still tart, but not bitter. That way, when combined with the sweet pie, I ended up with a perfect combination. I would definitely make this again, especially because it's so easy!

Red Bean Salad with Feta and Peppers

I used yellow bell peppers and added a little spinach and the colors were BEAUTIFUL. I put in garlic and herb feta so I left the fresh garlic out. Definitely add more lemon juice and olive oil and let the salad sit for a while. I've tried this without cabbage (because I dislike it so much) and it still works.

Cucumber Avocado Salad

This is good no doubt. It is crisp, refreshing, and the flavors blend well. I'm an onion lover and this was a little too much for me, although this could be the result of the sizes of vegetables I used. The taste of the avocado was lost a little, will add more next time.

Thin Mint Crackers

Definitely go with the low sodium Ritz. I wouldn't say these are just like thin mints because the texture of the chocolate is different and mine always come out sweeter than the girl scout variety. With that said, these are still very good and very easy to make.
