About this Cook
I cooked for my family a lot as a child so, I always considered cooking more of a chore then a joy. I hosted Thanksgiving a few years ago and I went all out. Homemade everything. I rec'd so many compliments and astonished looks too, that I decided to give cooking another try. And, I love it!
My favorite things to cook
I love stir frys and usual dips and salads. I like finding exotic spices and seeing how they fit into everyday dishes. I also like unique ways of making staple foods. Like, whoever decided to put garlic in mashed potatoes, that was sheer genius. No Irish person would have even considered it!! :)
My cooking triumphs
I made a meatloaf with over 18 ingredients and was sure it would taste most bizarre but, it was pretty darn good. I think I got the recipe from ALLRECIEPES.COM.
My cooking tragedies
There are too many to list. Mostly cakes and cookies that were burned or undercooked or tastless or too sweet. I have an issue with measuring cups and spoons, in general..:)

Easy Chicken Enchiladas
I didn't have any salsa so, I used 8 ounces of tomato sauce and I cut up green chillies and added that. I cut down on the cream cheese a little and added a can of refried beans. I cooked the chicken in a skillet with half a package of fajita seasoning. Baked in the oven at 325 for around 30 minutes. I also used the taco style shredded cheese and liberally sprinkled that on top. An easy and absolutely delicious recipe. Thanks for posting it!

Flourless Peanut Butter Cookies
I cut the sugar to 1/4 cup of the splenda brown sugar mix and they are still good to satisfy a sweet craving without messing up on a diet. It's hard to believe, once you taste the cookie that there is no flour. Amazing. Great recipe.

Beef Fajitas
Good recipe. I was looking for a replacement to the store bought fajita seasoning packets all the msg and chemicals yuck. I used lime juice instead of the lemon and was pleased with the results. Thanks, for sharing!
