I also used less olive oil and no cheese. I was only making it for two, so I used 1/2 lb shrimp. I did add artichokes and chopped some grape tomatoes in half. Instead of the broth or wine for the sauce, I used some of the water from the artichoke can (make sure not to get the kind in oil). Mixed it all with some whole wheat penne and it was delicious!

Rosemary Turkey Meatloaf
I love this recipe and so does my boyfriend. I have made this a few times and make a couple small adjustments. I think a whole onion is a little much, so I use about 2/3 and onion. I use 1/2 the amt of balsalmic and make up the rest with worchestershire. I use 1/2 the amt of milk and only make 1/2 the sauce. I would like to try a few more vegetables in this, so I might try celery next time. Sometimes, when I am really hungry I'll half it into two loaf pans so it cooks a little faster. Can even do it in the toaster oven to not heat up the house and use less energy! It's a keeper!

Barbecued Beef
This recipe makes the best BBQ Sauce ever. I have made it for several occasions and always get rave reviews! One person told me it was better than a well know BBQ joint in our area. I always make extra sauce to put on the sandwich after the meat cooks or just to keep in the fridge when I need a little extra.
