Butternut Squash Soup II
Made this last night and it was a hit and so easy. I did not think peeling and seeding the BN squash was difficult....just use a good knife and peeler. I omited the celery...used some left over mashed red potatoes (about a cups worth), and added about a teaspoon of ground cumin. I also omited the pepper and used 3 tablespoons of unsalted butter. I used 3 med size carrots and blended all the soup in the pot with a hand blender. Garnish with some fresh herbs and rosemary bread. So easy....yummy.

Minty Orzo Lentil and Feta Salad
I love this dish and will definetly make it again. I made a few adjustments by omitting the olive oil entirely(I didn't think it was needed), used pitted sliced black olives, and adding a box of frozen spinach that I microwaved and squeezed all the fluid out of. I also found that I could serve this recipe warm, room temp, or cold. Yummy !!!
