Italian Cream Cake II

I made this for Thanksgiving and WOW! The only variation I made was that I split each of the three layers and filled the split layers with the almond cake filling recipe from this website. I believe it made the cake very moist and added fantastic flavor. Other than that, I followed the receipe to a "T" and it was devoured by my family of four within the week. Given it is a HUGE cake, that is quite the compliment. I patted chopped pecans on the sides and sprinkled additional coconut on the top and it was gorgeous! I'll be making this again for Christmas...I haven't been given a choice.

Easiest Peanut Butter Fudge

Great recipe - wonderful flavor. I had to "knead the dough" at the end to incorporate all of the confectioners sugar, but the consistency was excellent and smooth at the end.

Fudge

This is the most incredibly easy fudge recipe ever! I'm not personally crazy about dark chocolate (semi-sweet) fudge, so I think I'll try milk chocolate or peanut butter chips next time, but I don't think my taste preference is a basis for reduction in rating. It's not the smoothest recipe, but given the ease in preparation, I still give it 5 stars. Thank you for sharing this - it's a keeper!

Slow Cooker Carolina BBQ

My entire family loved this one. I didn't cut down on the spices as some of the other reviewers did since we like spicy foods in my family, but if you are sensitive, you might want to. We loved it just the way it is. In fact, I have already cooked up several batches of this and divided into family-sized portions, put in the FoodSaver bags, and froze. It thaws very well after being frozen and made for an awesome work-night meal. I highly recommend this one - thank you so much!

Chocolate Pudding Fudge Cake

The entire family loved this cake! It is by far the best chocolate cake I have ever made. The only recommendation I have is to reserve this one for larger gatherings. It is incredibly rich and my family of four could not put it away before it hardened up and we had to waste about 30% of it. Small slices are in order unless you have an insane tolerance for chocolate.

Trisha's Game Day Dip

I got a version of this recipe from a friend of mine. Boiled chicken mixed with the hot sauce in bottom of greased lasagna dish, topped with mixture of slightly melted cream cheese mixed with blue creese dressing. Put in oven at 350 for 20 minutes. Top with cheese and bake another 10. This is heavenly if you like buffalo wings!

Brooke's Best Bombshell Brownies

Fantastic and my new favorite brownie recipe - I'm gonna tear up the card of the other in my recipe box...these are beyond compare! I followed the recipe as written (I didn't sub sugars as others suggested) and had no problems. In fact, the edges were as great as the middle, which is a first for me. These are pretty thick, even in the 13 x 9 pan, so it yields lots of brownies! I wouldn't half the recipe, though. I froze what little was left over after the kids got a hold of them. Thanks Brooke!

Slow Cooker Chicken Dressing

I've made this for years (without the egg - I'm gonna add it and see if it makes mine better) and my entire family loves it! A couple of suggestions: first, make the cornbread the day before and break apart after it cools and put in a large ziploc bag along with all dry ingredients. Then, in the morning before you go to work, put the chicken in the slow cooker with enough water to cover. When you get home from work, break the chicken apart and omit the addition of the chicken broth - you have made your own. I find that the sodium in the soup mixes is already above anyone's RDA. Add dry ingredients and let it cook on low for a couple of hours and you have dinner. This is a lifesaver for the working lady!

Chicken with Stuffing

I have been making chicken & stuffing in the crockpot for years, but never using the pre-packaged stuffing mix. I didn't personally care for the texture of this dish much. It was fast and easy, however, deserving the 3-star rating. I believe I will go back to the homemade cornbread method, however. The flavor was OK I guess...

Coconut Ice Cream

Are you kidding me?! This is the easiest ice cream I have ever made - no raw eggs or cooked eggs in it. I was not sure how good the texture would be without them but it's the bomb-diggidy if you like coconut! By far the easiest ice cream recipe on the planet - thanks a bunch!!!

Meat Filled Manicotti

This is a fantastic recipe! I made only a couple of changes...substituted ricotta for the cottage cheese and mixed just a little bit of the spaghetti sauce in with the filling mixture. Don't worry if someone doesn't like ricotta or cottage cheese...blended in, it only adds flavor. My husband, that doesn't like ricotta or cottage cheese, didn't even notice that it was in there. I see that many reviewers are commenting on the difficulty of stuffing the manicotti. My grandmother always said that the best kitchen tool is your hands. I found this to be especially true with this recipe. Just hold the noodle in one hand and plug the end with your fingers and stuff it with the other - not rocket science! You can get them really full this way too. Make a full dish of this one - don't half the recipe because the leftovers are awesome!!!

Pumpkin Roll I

I've made this for years - given to me by a friend. One alternative that we like better than pumpkin: omit the pumpkin and spice and replace with ripened bananas...my family actually prefers this combination over the pumpkin. Super easy - only downside is it makes a little bit of a mess but well worth it!

Mexican Rice II

I've made this one twice this week. I used the rice cooker. It's a little moist but I remove the lid after the "ding" and let is evaporate for a couple of minutes and it's perfect!

Absolutely Best Brownies

Given the ease at which these are made, they are fantastic! They are not, however, the best brownies I have ever eaten. If you are looking for a fast recipe that tastes great, use this. I will definitely make again - great for a work night!

Country Apple Dumplings

This is sinful! Everyone in my house gave this one a "thumbs up", which is very unusual. I had it ready in about 5 minutes and it baked up in less than 30 in the convection oven. Thank you for this one - it's a keeper!
