My favorite things to cook
I love to cook Tex-Mex. I live in south Texas; and it is my number one all time favorite food - cheesy enchiladas, yummy seasoned beef tacos, chicken green chili casserole and of course the staples - refried beans and Mexican rice!!!

Pumpkin Cookies VI
Yum-O! These are really good. Made the recipe exactly as is except for a little more cinnamon and pumpkin.

Fabulous Wet Burritos
Absolutely fabulous! I have made this dish at least 4 times and it is excellent. Make sure to use salsa instead of the tomato soup in the sauce that goes over the burrito.

Rempel Family Meatloaf
Made this for about the fourth time. It is wonderful. This time remembered to grind up the onion soup mix so my picky daughter wouldn't see the bits of onion. Made exactly as written. Used Heinz 57 steak sauce because my husband does like A-1. Excellent. The whole family likes it. I freeze the leftovers with some mashed potatoes for really good lunches for my husband to take to work.
