Gourmet Mushroom Risotto

This was pretty good. The only change I made was that I added some garlic. For some reason mine turned out pretty salty and I didnt add any salt, so I dont know. I still might make this again, though.

Bacon for the Family or a Crowd

I really wanted to try this because I hate frying bacon and it turned out perfect. I did like another reviewer and lined my baking sheet with foil then putthe bacon on the rack that fits in the pan. Didnt have to flip it or drain the grease.

Hawaiian Belly Buster Burgers

These are really good! I dont have a grill so I broiled mine. They fell apart a bit, but not too bad. Im sure they'd be even better grilled! Definitely a keeper! Yum!

Chocolate Chip Pancakes

These were really tasty. Nice and light and fluffy. The only change I made was that I used half whole wheat flour. I wasnt too sure about the syrup because Im not a huge fan of honey, but it was really good. My kids loved these too so I'll definitely be making these again :)

Easy Mashed Potato and Roasted Vegetable Enchiladas

I really liked these! The only changes I made were that I halved the recipe, used homemade mashed potatoes, added some red onion to the veggie mix, and also used some monterey jack cheese aswell as the cheddar. I will definitely make these again!

Chocolate Cream Pudding

This turned out pretty good. It was a little too sweet so next time I will cut back on the sugar a bit, but other thatn being too sweet the flavor was great and the consistency was just perfect. Creamy and smooth. I made dirt cups with this for my boys (with the oreo crumbs and gummy worms) and they were great! Will definitely make this again, just with less sugar.

Fried Chicken with Creamy Gravy

This is seriously the best fried chicken and gravy I have ever had/made! The only changes I made were that I only used chicken thighs (bone in, skin on) and I didnt have any poultry seasoning so I used some sage, thyme, and onion powder. I served it with potatoes, corn and biscuits... soooo good! There are few things I like more that biscuits and gravy and this gravy was freakin fantastic with the biscuits. This will now be the only fried chicken and gravy recipe I will ever use!!! Well worth the 5 star rating!

Fruit Dip II

This was really yummy! I didnt use marshmallow creme though, I used some homemade marshmallows that I needed to use up and it worked out well. I just melted them in the microwave then stirred in the cream cheese. This is great with pretty much any fruit I think. I had it with some apple slices, strawberries, grapes, and banana.

Radish Dip

I was looking for a recipe to use up some radishes I had and this was perfect! I did halve the recipe but kept the amount of radishes the same. I also added a little salt. Its really good and I made the best sandwich with it. Spread this on both sides of the bread, then some turkey, tomato, shredded carrots, and sprouts. Yum!

Pesto Scrambled Eggs

These were really good! Only changes I made were that I did not use oil, just a little butter and I used mozzarella cheese because I dont think cheddar goes with pesto. Very cheesy and very yummy!

Coconut Tofu Keema

This was the first time I have ever made/ate any sort of Indian dish and I thought the flavor was pretty good. The only changes I made were that I did not use red pepper paste because I dont have any and I dont like spicy. Also, I only used one 15 oz can of tomato sauce and I think it was plenty. I cant imagine using 6 cups of tomato sauce, it was pretty soupy with the one can. Anyway, I ate it with some garlic naan from Trader Joes which was really good and actually my 2 year old loved it. Im not sure if I'll make this again, I think its a good recipe, but I dont think Im a huge fan of Indian food.

Herman Pancakes

These were good, nice and fluffy. The only changes I made were that I used my regular starter, used 1/2 whole wheat flour, and added some pecans and walnuts because I was feeling a little nutty. So they turned out good and I had them with the "absolute best pancake syrup" from here.
