Brown Rice and Black Bean Casserole
This was good. I don't typically like casseroles, so it was nice to find something I would eat! I added a lot more rice (used 1 C dry) and more carrots (1 C shredded). I also used a bit of cayenne pepper instead of the green chiles (didn't have any on hand) and cheddar instead of swiss. I mixed part of the cheese into the casserole and the rest I put on top. I added a sprinkle of garlic powder as well. This will go onto our regular menu plans, I think!

Unbelievable Fish Batter
Great flavor and lightness. I used it on fish and onion rings! Yum!! My problem wasn't the batter but my ability to deep fry!

Chicken Marsala
I followed the suggestions made by other reviewers and doubled the sauce. I also added some garlic/onion powder to the flour. This turned out great. I added cornstartch and cream to the sauce afterwards to thicken up the sauce -- but I added too much. Still tasted good! Served it to family that was in town with angel hair pasta. It was a huge hit!
