Ricotta Spaghetti
I am so sorry, but I really didn't like this. Maybe if I had sauted the garlic ahead of time, it would have been better, but it really needs something--maybe some tomato sauce to brighten it up a bit.

Low Sugar Strawberry Rhubarb Crunch
I love rhubarb--I can even eat it raw all by itself--but this was just too sour for me. I ended up having to sprinkle sugar over the top of each serving and add a generous dollap of cool whip to cut the tartness. Which is really a shame b/c I love the idea of this recipe. One of my friends said she liked it, but the other also thought it was too sour.

Baked Asparagus with Balsamic Butter Sauce
Switched the balsamic vinegar & soy sauce amounts and sprinkled a wee bit of garlic powder over the asparagus as it was cooking. Sensational and I can't wait to have the left-overs tomorrow!
