Egg and Sausage Casserole
Excellent recipe, thank you for sharing it. I made a minor change, as I didn't have any cresent rolls I used a can of large biscuits which I flattened out. Also, my family suggested that the next time I make it I also make some white gravy to laddle over the top. Wonderful stuff!

Boudreaux's Zydeco Stomp Gumbo
Wonderful flavor and easy to fix! I didn't have the roma tomatoes or the celery, so I substituted a can of stewed tomatoes that contained celery. I also omitted the chicken, as my husband is not fond of it, and increased sausage to 1 lb. Instead of serving rice on the side I added 3 cups instant rice after adding the meat and then covered and cooked for 5 minutes. Also, I used Tony's creole seasoning and only added about 1/8 cup instead of 1/4, and I did not add the fresh red chile peppers. Thanks for a great recipe!

Delicious Black Bean Burritos
Did not have all ingredients so I used this as a base and then added 1 lb deer burger browned which I seasoned with cumin and a little tex-mex seasoning. I substituted green chilies for the jalapenos, used shredded mexican cheese blend instead of cream cheese, and used dried cilantro as no fresh on hand. Had to omit red bell as I didn't have any. Served with black bean salsa and sour cream. My husband who wasn't hungry had seconds and my nine year old mexican food loving son requested I make them again. Thought I should have used a bit more seasoning to give more flavor. Will try again with correct ingredients but still a good base to use and build on.
