About this Cook
I'm an okie from Muskogee..lol..I have been married to my wonderful husband Ricky for 6 years. I have a beautiful step-daughter Audrie none of our own but working on that. I enjoy singing, playing pool, crafts, and of course my new found hobby cooking.
My favorite things to cook
I like to fix things that I will have plenty of leftovers for lunch the next day. Such as chili, stews, casseroles.
My favorite family cooking traditions
Cooking from scratch. Homeade biscuits and gravy is one of my fav's.
My cooking triumphs
Well my most complimented dish is my homeade enchilada's it a recipe given to me by my Great Aunt Jeda.
My cooking tragedies
My first time making chicken and dumplings I guess I added a gallon of extra water because know matter how much batter I kept adding it would not cook up.

Delicious Ham and Potato Soup
I think I will be making this every week maybe even twice. This is the absoulute BEST potato soup ever. Very easy to make. I tried to follow the recipe exactly, but ended up having to add a tsp of flour and a tbs. of butter. I thought it was never going to thicken up, but then I turned the heat up, and it didnt take long at all. I wish I could add more stars as this recipe definitley deserves it. : )

Speedy Salmon Patties
Great recipe I did change it up though. I added about 5 extra cracker's, teaspoon of lemon juice, and a tablespoon of Heinz 57. Turned out great the Heinz gave it just the right amount of flavor without overpowering it. I think next time I will put some flour on the outside for a crispier crust.

Spinach Dip with Water Chestnuts
I Love this recipe. I did't have Mayonnaise this time so I used Miracle Whip, and I definitley don't reccomend it. I'm going to try to salvage it and make ham pinwheels in the morning with it I will let you know how that turns out. UPDATE: I ended up adding an additional cup of sour cream and about 2 more oz. of spinach, and it turned out great. Everyone said that they loved it.
