Potato Leek Soup II

This was delicious! I used half goat's milk and also sautéed some mushrooms and put them in after the boiling stage (but it would have been just as delicious without the mushrooms, I'm sure). I agree with whoever said that fresh potatoes might be a bit better because flakes are ever-so-slight grainy, but it's so much easier this way. I can't wait to get home tonight and polish off all the leftovers. yum yum yum!

To Die For Blueberry Muffins

I make a lot of muffins, and I've made several different kinds of blueberry muffins lately. But everyone said these are the best yet! I only used about half of the crumb topping, because all the muffins were already totally covered and I couldn't see adding any more to the top. I used Sugar in the Raw and I think it added a nice sparkle and texture. These aren't going to be my regular breakfast muffins just because there are healthier alternatives out there, but they are totally delicious and perfect for a treat!

Pizza Dough I

Love this - quicker than most pizza doughs, but still delicious. I thought I had rolled it pretty thin, but it still became quite thick in the oven. I made two smaller pizzas in 8-inch cake pans, and baked on 425 for 15 minutes. I did have to add just a spoonful or two of water while the dough was mixing, because it wasn't sticking together. But overall, it's great and I'll definitely make it again!

Apple Muffins

I am personally not a big fan of these. I wouldn't make them again except for the fact that the two people I gave some to really liked them and have specifically requested more! To make them less bland, I add 1/4 tsp vanilla and about 4 Tbl of Splenda. I do like that they're healthy - even though I'm not crazy about the taste, I can grab one for breakfast and feel full and guilt-free.

Super Easy Chicken Noodle Soup

I really liked this recipe. I did change a couple things from reading previous reviews, though - I added a bit of garlic powder, boiled an onion in it, and cut the chicken into cubes *before* putting it in the pot. Once I made it with a can of cream of chicken, and once without - honestly, I didn't taste enough of a difference to make me bother doing the cream of chicken thing again. I did add vegetables. There wasn't much broth by the time it was done cooking - but I like that. I don't like my soup to be very watery. My boyfriend loved it, too!

Lemon Cream Cupcakes

I don't even like lemon cake, I just made it for my boyfriend for his birthday. But I couldn't stop eating them! And he said that they tasted "just how lemon cake should." I did use cake flour instead of all-purpose flour, and added an extra 2 tablespoons for each cup for the conversion.

Monkey Bread V

Honestly, when I tasted this I thought it was just OK. It was good, but not so good that I couldn't stop eating it and definitely not as good as my mom used to make (I'd never made it on my own until now). But I made it for a company lunch and people have been emailing me and stopping me in the halls for two weeks now telling me how delicious it was - including people who have never talked to me before. So apparently most people like it! I did change it a little bit. I didn't use nearly as much of the sugar mixture as the recipe called for, even though I coated all my biscuit pieces as much as I possibly could. So I used the leftover sugar mixture for the glaze on top, and added 1/4 cup brown sugar to that, too.
