Golden Coconut Almond Muffins
I really liked these and would have given them 4 stars myself, but no one I shared them with enjoyed them.

Potato Leek Soup II
This was delicious! I used half goat's milk and also sautéed some mushrooms and put them in after the boiling stage (but it would have been just as delicious without the mushrooms, I'm sure). I agree with whoever said that fresh potatoes might be a bit better because flakes are ever-so-slight grainy, but it's so much easier this way. I can't wait to get home tonight and polish off all the leftovers. yum yum yum!

To Die For Blueberry Muffins
I make a lot of muffins, and I've made several different kinds of blueberry muffins lately. But everyone said these are the best yet! I only used about half of the crumb topping, because all the muffins were already totally covered and I couldn't see adding any more to the top. I used Sugar in the Raw and I think it added a nice sparkle and texture. These aren't going to be my regular breakfast muffins just because there are healthier alternatives out there, but they are totally delicious and perfect for a treat!
