Excellent. Very economical, makes a lot.
I made a few chages, but it was a great recipe. I used 10 inch tortillas. I used one can of pinto beans drained and put that over the meat with the other ingredients. I cooked as directed and added the broth and cooked 1 hour longer. I used a 2.5 lb pork loin. I shredded one-half of it and added it back to the beans,filled tortillas and baked. I am going to use the other half of the meat for pork barbaque sandwiches - look out - this meat is meant for dual purposes. Using one-half of the meat with the can of beans gave me enough to fill 16 - ten inch tortillas. thanks for sharing your recipe.
