Rock Salt Encrusted Prime Rib

We just used a small roast, but the meat was still cooked perfectly. The leftovers were a bit salty though. the biggest pain about this was the cleanup. It took 3 days of soaking to get the shell off the pan. Next time would definitely use a disposable pan.

Good simple dinner. I used bison instead of beef to make it a bit leaner. Hubby and toddlers all ate it with no complaints.

White Almond Wedding Cake

Used this for my first wedding cake and it was a huge hit. I made five tiers, some white and some chocolate and used a cream cheese frosting. In the white cakes I used imitation almond because of nut allergies in the family, so I added a tad extra. In the chocolate cakes I replaced the almond with rum extract. All the baking was done Wednesday for a Friday wedding and the cakes stayed perfect. I overheard tons of guests going on about how awesome the cake was, so it is definitely a recipe I would use again.

Tangy Pork Chops with Vegetables

The meat came out very moist, but was lacking in flavor. The veggies were good, though next time I would probably use less bell pepper. My hubby said he would have liked some mushrooms tossed in too.

Kalua Pig in a Slow Cooker

This was ok as written. It was definitely moist, but was just bland. Didn't have the same flavor I remember from my days living in Hawaii. My mom whipped up a sauce from pineapple juice and brown sugar that we poured over it that made it much better.

Apple Pound Cake

When this came out of the oven, I was really worried as it looked extremely dry. The glaze though perfected it. It was rich and moist just like a pound cake should be. I omitted the raisins and nuts due to allergies, baked it in a 9 x 3 round pan, and also iced it with a homemade caramel frosting. Excellent treat that brightened up a gloomy fall day.

Southwestern Pasta Salad

Made this for a picnic, so I doubled the pasta and sauce, but left the veggies as written. Everyone liked it, though it did seem a tad dry after sitting for a little while in the fridge. Next time I think I'll keep a lime on hand to squeeze over it just before serving.

Cream Filled Cupcakes

Made the cream filling part of this recipe twice this weekend and it was fantastic each time. The first was in some mini red velvet cupcakes for the 4th and the second was in a store bought chocolate cupcake mix for a birthday. Both times they got rave reviews. Makes a nice surprise in an otherwise simple dessert. Since I iced them, I just squirted it in the top, rather than through the liner like the recipe suggested.

Used this exactly as written and it was great. Sweet and creamy, but not overly rich. Unlike others, I didn't reduce the shortening since it needed to stand up to some heat and humidity on the 4th and butter recipes tend to melt.

Chile Pork

I did this a tad different. Used it last minute, so didn't have two hours to bake. It did sit in fridge, then I broiled it to cut down on prep time. It was still very moist. I personally didn't like the texture of the spice coating so dipped it in salsa ranch. My picky two year old skipped the dip and ate seconds and thirds and even asked for leftovers the next day! So for that it gets a 5 stars.

New York Style Cheesecake

Fantastic treat! Cheesecake has always been my weakness, so 4 months into my low carb diet I was definitely experiencing some major cravings. This recipe was perfect. It was surprisingly easy to mix together, since I had always thought cheesecakes were complicated. It was dense and creamy just like a "real" one would be. With a chocolate graham cracker crust and strawberries in splenda syrup on top it was just as yummy as one you'd get at a restaurant. Now my only problem is not eating the rest of it! Thank goodness most people at the party asked to take some home.

Crab Bites

Made these for a MMA party for several men and they gobbled these right up. Like others I made a few changes. I used an 8 oz. package of crab, reduced cream cheese to 1 1/2 packs of reduced fat, doubled the spices, and added a few dashes of hot sauce. It came out perfect and was more than enough to fill 30 shells. My hubby detests cream cheese,so was surprised he enjoyed these so much. He even saved some back for later. This recipe is definitely worth tinkering with as the combination of flavors is really good.

Grilled Tuna with Fresh Tomato, Cucumber and Dill Relish

Very light and fresh. I didn't have flavored rice vinegar, so I added a bit of the the seasonings to the marinade. The veggie topping was by far the best part though.

Potato Delight

This was fantastic. I love cabbage with potatoes, but adding in all the other veggies too made it even better. No sour cream on hand, so I added just a little bit of shredded cheddar. I also cut the meat out. Will definitely try this variation of a classic again.

The cooking time under the broiler was way too long. I set my timer for the first side and about halfway through they were already black. The flavor under the burnt outer layer was ok, but nothing exciting.

Crab Delights

Vanilla Punch

This punch turned out fantastic. Everyone at my daughter's first birthday raved about it. Mixing the syrup was a cinch. The only problem I had was when it came time to serve it, the refrigerated syrup had thickened and settled a bit. After a few short bursts in the microwave though it was remedied and the final punch was great.

Cinnamon-Curry Tuna Salad

I didn't actually try this myself due to the cinnamon. However, I made this for a party on mini crescents, and they were very well recieved. In fact, I even had several people request the leftovers. I made it exactly as the recipe stated, with the exception of some added golden raisins.
