Pork Chops with Italian Sausage

This is fantastic! I served it atop whole wheat spaghetti and it got rave reviews! This is another one that my husband brings to work for lunch the next day and has several interested parties at his lunch table. He brought some in the next time for everyone to try. They think we are gormet cooks now!

Chutney Chicken

This was awesome! I used only 5 thighs and 1 skinless/bonelss breast. I removed the skin from one of the thighs. I still skimmed off some of the fat when it was done. I put the smaller portion in a smaller casserole dish and it made a saucier recipe. I served it with Near East Mediterranean Curry Couscous and the combination of the flavors of chutney, onion soup mix and couscous were incredible. My husband brought some to work to share with a co-worker who is always interested in the food my husband brings from home. He loved it too! This is an easy keeper!

Curried Coconut Chicken

This is a keeper! Yes, it was a little soupy and I drained my canned tomatoes but I think it's the cocoa nut milk that makes it soupy but Jasmine rice soaks it all up. YUM! I also used a hot curry powder because we like it spicy. This is one that we opened the windows and doors for so that we could make our neighbors jealous! I have leftovers for lunch today! It's delicious!

Oven Pot Roast

This is absolutely the best pot roast we've ever had. I used chuck pot roast and followed the recipe but changing the vermouth to a dry white wine because that's what I had available. This makes the most delicious gravy we've ever had with a pot roast. I make redskin mashed potatoes to go with this and it is a hit every time. I made it twice in two weeks because it was so good. Leftovers don't stick around long with this one!

Key West Chicken

We've made this recipe several times with great success. Lately I've taken to pounding out the chicken breasts to flatten them out just a bit and render them a little more tender. It works. The flavors in this recipe go with so many other things like citrus salads, couscous, rice. Sometimes for a little extra kick we double the lime juice, it's great. Our whole family loves this, guests have loved it, it's a hit.
