My favorite things to cook
I love to bake desserts, although I am now on a 'healthy diet' kick. So right now, I'm enjoying finding new and delicious ways to work with what I'm allowed to eat.
My favorite family cooking traditions
Red velvet cake. My late grandmother had this as her signature cake, and it's loved by all. I've never taken it anywhere where it hasn't started conversations and brightened faces.
My cooking triumphs
Pork chops - YES! with apple slices and gravy on top, o wow. So good.
My cooking tragedies
I tried making grapefruit chicken instead of orange or lemon - what a disaster. I threw it all out and felt guilty about wasting food for the next week!

Salmon, Rice, and Fried Tomatoes
The salmon was great, although I added some Mrs. Dash - I just need more flavor. I love the idea of flavoring the rice while cooking, a way to make it extra-special. I didn't try the tomatoes b/c I didn't have any on hand. I'd make it again. Got good reviews from the husband.

Banana Cake VI
A-MA-ZING. My husband ate this until his stomach hurt. I had one piece and had to stop! Changed it a little bit - added 1 tsp cinnamon, added one more banana, changed the sugar to 1c white granulated and 1c light brown. I did wrap it up and put it in the freezer for 30 min., and because I had it in two 9" round 1 1/2" thick pans, it only took about 45 min. to cook all the way through. So good, but the frosting's a little runny. Might use a different cream cheese frosting recipe next time, something thicker, or might just chill the frosting, too. THANK YOU for posting such a great recipe! Definitely a new favorite.

Red Velvet Cake
My grandmother used to make red velvet cake, and after she passed, I've made probably 5 different recipes to replicate her cake. This came the absolute closest. It's delicious, and wows the crowds every time I make it for class (I'm in college) and even the teachers are impressed. It CAN BE DRY. So make sure you check it in the oven before it's done. Pull it out right when you think it's not quite ready. Then, LET IT SIT!! It will continue cooking as it cools, just like cookies. Do not cut it or frost it before it's done cooling. You'll thank yourself when you have an amazing, moist, incredible cake. Marriage proposals from this one!
