I'm a homeschooling mom to a preschooler. He is my only child who I love to spend my time with. I'm a Christmas fanatic. Every month on the 25th I try out a new recipe to see if I like it enough to make around the Christmas Season. If so, it goes in my Christmas Binder.
My favorite things to cook
I love to cook vegetables. Steam, saute, anything. One of my favorite things to make is stuffed mushrooms. However they take forever. So I just cut the mushrooms in half, make the stuffing the same way and just throw it on top of all the mushrooms. Done! LOL
My favorite family cooking traditions
I have none. I come from a family who hates cooking. I always wanted to know how to cook. So God gave me a wonderful husband who is awesome at cooking!!!
My cooking triumphs
My best things that I make are ritz chicken, alfredo sauce, and I've mastered steaming and sauting veggies
My cooking tragedies
The first time I bought a Digiorno pizza, I didn't realize I was supposed to take the cardboard out from underneath. I always bought Ellios before I was married because it was easy. When I moved out on my own, by myself (I was 18) I lived off of spaghetti with store bought sauce, Ellios Pizza, and Denty Moore Beef Stew. It's amazing how far I've come!!! LOL

Best Marinara Sauce Yet
This is now the sauce that I will be making permanently. I did not have any stewed tomatoes - only diced...so I boiled the 2 cans of diced tomatoes with a tsp of sugar. I used a tablespoon of dried parsley (I rarely have fresh) I used chicken broth instead of wine (I don't cook with wine) I also added the sauteed onions, oil and chicken broth to the food processor after cooking, to puree the onions with the sauce. (Son doesn't like anything noticeable in his sauce) Then added back to the saucepan. Left on the stove for several hours and the flavors just keep getting better. Awesome recipe!!

Delicious Christmas Cookies
I just made these cookies. I wish I had read the reviews before hand. (I usually do). I agree with a lot of the people who mentioned them being very "soupy." I would say they are very "sticky." However the flavor is outstanding. They taste good enough for me to try to make these again. i will put the dough in the fridge and follow all the other comments that were made. Don't give up on this recipe. The flavor is worth making it again. I do have to agree that it isn't a cookie for company. The typical look of a cookie doesn't happen with this one. But it tastes great. I normally don't buy coconut or the sweetened condensed milk, so this won't be an "all the time" cookie. My main problem that I had was trying to get these bad boys off the pan. Will definitely grease the pan even though it says not to.

Meatball Sandwich
I found this recipe while doing a search for ground beef. I had some thawed out and didn't want it to go to waste. Now I did not have any grinder rolls to make this into a grinder. However.....I had Hamburger buns. So instead of making a whole bunch of meatballs, I turned them into 6 big meatballs and flattened them on the cookie sheet. I did not change any of the ingredients. I even followed the instructions for the bread (the olive oil, garlic powder, & salt)on the hamburger buns. It was wonderful. My husband had 3 of them. Keep in mind he had gastric bypass surgery so he snacked on them throughout the night. 5 Stars!!!!
