Shredded Beef Enchiladas
I shredded some left over pot roast for this, but used the rest of the recipe. I added sauteed red bell pepper and canned red sauce. Very good.

Garlic Roasted Chicken
Wonderful. The gravy was a really nice touch. This was my best roast chicken ever.

Oven Stew with Burgundy Wine
I loved this stew! The only reason I gave it 4 stars was that it was pretty salty and I love salt. That may have been because I used cooking wine. Thanks, though, this is a keeper.
