Zesty Breakfast Burritos
Superb!!!! I love these breakfast burritos. I could eat them all day long. I like to make them up and freeze some for later.

Red Skinned Potato Salad
Delicious. I made this recipe first as written. The second time I made it I substituted creole seasoning (Tony Cacherres) for the salt. I took it to a company picnic and got rave reviews. Several people asked for the recipe.

Fish Tacos
Maybe fish tacos are an acquired taste. These were fair, but I wouldn't make them over and over again. The white sauce was used over mexican beans & rice the next day. The fish in this recipe was just bland.
