Currently working part-time with a research company and am studying to add a Criminology certificate to my BA in Psychology. Spend a lot of time cooking and baking, knitting, making art and playing with my cat.
My favorite things to cook
Quesadillas & guacamole, pita pizzas, sweet potato stew, gingerbread with rum sauce, Peanut Butter Kisses, comforting cornbread, and really anything that involves hot spices and/or cheese.
My favorite family cooking traditions
Turkey dinner on Christmas Day! My Mom and Grandmother have been making stuffing with savory (available, for the most part, only in NF) and onion bread pudding for as long as I can remember.

Discovering the perfect recipe for fat, chewy chocolate chip cookies.
My cooking tragedies
Making a large batch of pretty Easter cupcakes for my family, and tripping as I emerged from the kitchen with a platter. The result was an unidentifiable mess of icing and cake.

Sour Cream Chicken
Yum! A great way to use up leftover sour cream. I used Low-fat Cream of Mushroom instead of Cream of Chicken. I liked it as is but it would be great with some garlic, green onion, etc. as suggested by others.

Green Chili Chicken Sandwiches
Yum! I have been looking for some different recipes to try and this was definitely a change from the norm. I do not have a grill so I baked the chicken after marinating for 20 minutes at 350. Grilling would have been best, but even without it was delicious! A quick way to flatten the chicken breasts is to squeeze them between two cutting boards and pound. I also used chopped green chilies and onion kaiser rolls. This sandwich has a gourmet feel with very little work.

Vegetarian Jambalaya
Yum! This is a great way to make a healthier version of jambalaya. I used instant whole grain rice, cooked it, then followed recipe as instructed but only baked for 10 minutes. It was wonderful with sour cream.
