New York Cheesecake II

A very good basic cheesecake. I added lemon & orange zest and juice because I love a citrus flavor and bakes @ 425 for 20 minutes, then 200 for 40 and left in the oven overnight. Another day in the fridge and the texure was PERFECT. I did get a crack, but it was tiny, and I'm not willing to risk soggy crust with a water bath.

Nannie's Hot Milk Sponge Cake

Easy and tasty, but nothing spectacular. Dense, moist, and really good warm, especially with fresh whipped cream. I cut the baking time WAY down, however--by about fifteen minutes. So keep an eye on yours.

Quick Pasta Sauce

Used a bit extra olive oil and six leaves of fresh basil instead of the dried--this is a gorgeously easy and delicious sauce. My go-to recipe!

Best Brownies

These weren't the best brownies I've ever had, but they were pretty good. I didn't care for the honey flavor in the frosting but no one else even noticed. Also, I only baked these for twenty minutes and it was plenty, and they were rather thin. Next time (and I will make them again) I'll double the recipe in the same size pan for a thicker, gooier brownie.

MMMMM... Brownies

i only baked these for twenty minutes because i like a very fudgy brownie, and they were perfectly done. i followed the recipe exactly and they were very good, but tasted, according to my sister, more like melted chocolate chips than brownies. next time i might try milk chocolate chips or another extract for a different flavor. i also think these would be a very good candidate for a stir-in such as nuts or peanut butter chips (once the batter cools a bit!).

Almond Biscotti

the flavor on these was pretty good, but they fell apart on me when cutting. i let them cool for the recommended amount of time, so maybe they needed to bake further? also, the loaf i shaped melted into a malformed lake so the sizes were uneven. even after dipping one end in chocolate and rolling them in almonds, they weren't attractive enough for their intended gift baskets, and ended up as snack food for the family. next time, i'll cook more the first bake, and lessen the secondary baking times.

Baked Flan

Made this for my brother's birthday and he not only had two enormous pieces, he ate it for breakfast the following day, and then again for dessert. The top browned quicker than I liked, so I took it out before it was completely set and let it continue cooking in the water bath. The texture was perfect. A tip about the sugar, though--make sure there aren't lumps before you start cooking it! I had a few lumps left when I baked it. It still came out well, but if you're a perfectionist be warned that lumps don't melt! And don't be worried that it will stick to the pan. Mine came right out with just a slap on the bottom, no breaking or sticking.

Curry Chipotle Satay

Made this for my boyfriend's birthday since he ALWAYS orders beef satay at thai restaurants, and he practically got down on the floor and kissed my feet. may i just remind you to SOAK THE SKEWERS, though!! this step CANNOT be skipped or even done halfway.. i forgot to until i was ready to broil everything, so even though i soaked for a minute, most of my skewers caught on fire. apparently the most delicious thing i've ever cooked, regardless of skewer fires, though!

Easter Egg Nests

Adorable, easy, and fun for kids and me ;) I also made some with toasted coconut (425 and WATCH IT CAREFULLY!!) and peanut-butter melting candies, so they not only were brown and lifelike, but SO GOOD. Thanks for the idea!!

Beef Stroganoff III

i'm a vegetarian but for my meat-eating boyfriend's birthday i agreed to cook him meat, which i've never done before. this recipe was SO EASY and he said it was the best beef stroganoff he'd ever had. i did omit the wine (we're not wine drinkers and it seemed wasteful to buy a bottle for such a small amount) but it apparently didn't detract from the flavor. other than that, i also just used a regular yellow onion instead of the green ones, and then served it over buttered egg noodles. VERY big hit. thanks for helping me make his birthday special =)
