Roasted Garlic Zucchini and Tomatoes
Wonderful!! I wanted to try something different with zucchini and decided to try this recipe. Excluded the red pepper flakes but followed the rest exactly. I put mine in the small roaster oven which worked perfectly. My husband is the final decision maker and he gave it a thumbs up; and he is not thrilled with veggies! Thank you for this great recipe!

Mozzarella and Tomato Appetizer Tray
This was great! As other reviewers, I used fresh ingredients to make it taste superior. I skipped on the red pepper and capers since I didn't have any on hand, and it was still fantastic! We eaten this type of appetizer when we go out and my husband thought it tasted the same. Easy to make and you can easily tweak it to your preferences!

Green Bean and Potato Casserole
I used fresh green beans, Yukon potatoes and whatever cheese I had in the frig. I also used a can of mushroom soup. I decided to try added turkey sausage (sliced and browned first) and added some seasonings as others recommended. (pepper, onion and garlic) I put this in the crockpot to see how it would turn out. Ends up, I had to leave it on high for 4 hours till it was done! (I didn't realize I would have to cook it that long but I guess it was because I used fresh ingredients) But after waiting that long it was tasty. Perfect meal for the cool weather!
