These are great to make for a crowd. Make the scrambled egg mixture, fill the tortillas wih the egg and cheese. Secure with toothpicks. Spray with cooking spray and bake till cheese is melted and torillas are crispy.

Try marinating in buttermilk if your chicken comes out dry.

If you're in a hurry , you can saute the slices in olive oil flavored cooking spray (or regular , for that matter.)

If you like ginger...add some...mmmmm!!!

Whoah!! this one was off the chart. And I think I know which "popular drive-in" it was...because I love their onion rings..Sonic. Anyway, I'm an onion ring connoisseur and these exceeded my expectations. I'm in south Korea, had to use soybean oil and didn't have a thermometer, made my own breadcrumbs by toasting a crumbled hamburger bun then toasting and crushing it... And they were STILL amazing. I like flavorful food too...but I can't see how anyone can think this is bland. They taste like ONION RINGS. For me....just a little salt lets the flavor of the onion come through. Ohh..I dip them in ketchup but that's just personal preference. This will be given a special place in my cookbook. I want to try the same coating with fish. Thanks so much!!

Good stuff!! For those who like a thicker soup base you can try one of two things. You can add tomato paste, but you may have to adjust seasonings to account for this. Or you can add black beans and mash some of them. These give a nice cream texture.

Yum Yum Yum!!!! I'm teaching in Korea and one of my friends requested that I make a veggie lasagna so I chose this one. I was able to get most of the ingredients at the foreign market here. I made some changes but i kept the "heart of the recipe" the same--- the ricotta-feta-pumpkin-pesto filling. I'm glad I made myself a small one in addition, otherwise...the one I made for my friend would not have made it to her...haha. It was well-received by my teacher friends.
