About this Cook
I'm a full-time working mother of 2 young boys. I work from home, so like to prepare good meals. The best meals will have few ingredients, take only a few minutes to prepare, cook quickly, and make the family say "Ahhh - that was good!"
My favorite things to cook
A Korean dish called Bulgogi (no idea how it's spelled in English). I also LOVE to make Buckeye balls at Christmas time and peanut butter fudge. As far as everyday meals - spaghetti.
My favorite family cooking traditions
I have a Swedish background, so we make Patortiscorf about once a year(Swedish potato sausage). We also like to make potato pancakes when my parents visit. It's a special treat.
My cooking triumphs
I have learned to make a lot more things from scratch because of allergies. I've made chicken & beef broth, a variety of soups, and bread (with and without a bread machine). I've also delved into gluten free cooking for one of my kids. I have learned how to can a few things, but plan to expand on this area as time allows.
My cooking tragedies
Nothing major - just a forgotten ingredient here or there that ruined the meal.

Cheeseburger Soup I
This was very good, but lacked something for us. I used homemade chicken stock combined with organic chicken broth. My stock is not very salty. Once I added salt and pepper, this turned out great. I used 3/4 cup cream and 3/4 cup milk to get an ultra creamy taste.

Jo-Ann's Power Bars
My boys (3 & 6 yrs old) ate this OK, but it is far from their favorite. At a glance, the ingredients suggest a healthy breakfast / snack bar - but it is lacking in something.

Raspberry Oat Bars
This was yummy. I used some whole grain flour and some oat bran, so it was crumbly - but yummy. I also used 100% fruit spread, to limit the sugar. Both young boys liked it so much. My 3 yr old calls it cake! ;)
