Banana Banana Bread

I used frozen bananas which I thawed in the micro and then let it drain (excess water) in the strainer while put together everything else. I also did add a hint of cinnamon and a tsp of vanilla. YUM. Moist and very yummy. It took a little longer than 65 min to bake, but maybe cause I used who knows how much bananas. I just broke off whatever could come out of my zip bag from the freezer and nuked it. But my 5 yr old LOVED it for brkfst this morning. He enjoyed helping me make this. Thanks for the great recipe!

Sweet Potatoes with Sausage and Peppers

Made this dish last night for dinner. Only had green bell peppers on hand, so I used that. I diced up and boiled separately while cutting up rest of veggies. I also added some garlicand used turkey sausage (not the crumbling kind). Maybe that is what turned it a bit. My 5 yr old thought it was too spicy (even with the mild salsa). I somewhat liked it, esp over rice. I might make this again, but only if I'm not the one who has to eat it all. Chances of that in my house is very likely since no one else likes salsa.

Best Easy Chicken Croquettes

Very good. I minced up some red onions (that's what I had on hand), garlic as well as some red pepper. Sauted those veggies with some EVOO (lightly). Also had no breadcrumbs, substituted by grinding up some cracked pepper triscuits. YUM! Came out great. Formed the patties, placed them in the fridge for only half an hour, rolled them in more triscuit crumbs and pan fried them with PAM. Came out delish. My 5 yr old didn't want anything fancy with them, just a hamburger bun, so well I followed and well it's different, but so delicious.

Shrimp Scampi Bake

Followed other's advice, used only one stick of butter, added fresh parsley and about 3 big cloves of garlic, along with thawed frozen shrimp. Needed noodles in a rush so I used Ramen noodles. My son isn't a big shrimp fan, but loved the noodles with the sauce. Easy to make. Will do again, thanks!

Homemade Pancake Syrup

This was very easy to make. I used Almond extract and vanilla. Gave it a four cause it has a nutty flavor (used the nut extract). Next time I'll just use straight vanilla. My 5 yr old gobbled it up along with blueberry pancakes. YUM.

Juicy Roasted Chicken

YUM! I followed recipe to a T. I first brushed some olive oil all over the bird and seasned it with poultry seasoning, garlic powder and salt and lemon pepper. I also added some cloves of garlic and tucked them in the bird, and around the wings and legs. Very tender and juicy, had tons of leftovers and made a casserole dish the next day with leftovers thanks!

Juiciest Hamburgers Ever

This is a great recipe, made this twice now. I followed the recipe exactly the first time and it was so juicy (except used regular organic milk). Second time made it with reg milk again, and instead of breadcrumbs, used quick oats (healthy stuff), added some garlic powder and a dash of black pepper. YUM. My 4 yr old ate it both times, and hubby loves it too, it's a keeper. Next time I'll try to make it with ground turkey instead of beef. Tasty. **UPDATE** Been making this recipe since I found it on the web. Hubby prefers this way instead of buying frozen patties. I just buy a bulk of grd beef (mix in a little turkey) and make a bunch of homemade patties to freeze. He loves them this way. **UPDATE 12/3/08** It's better when you use fresh garlic cloves instead of the jarred ones. Hubby did notice the difference. I finely ground the oatmeal to resemble bread crumbs. Last time I didn't, DH noticed that it was "healthy". Oops. So now he doesn't know and we're all eating a bit healthier.

Sherry Sour Cream Chicken

Gave it a 4 cause it seemed like it lacked a little bit of oomph for flavor. Took the advice from others and I added some crushed garlic and diced onions when I browned the chicken. Also added a can on mushrooms (didn't have fresh). I deglazed the sherry in the pan getting up all the bits of garlic and chicken from the pan. That helps take away the alcohol taste if you're worried about that. I had to use up a sour cream container so this was perfect. I did forget to add the butter in the mixture, so I added it in the baking pan in bits and pieces and did my best trying to mix it. Overall it's a good recipe, nice twist on the traditional cream of mushroom style. Will try again with added veggies.

Zucchini in Sour Cream Sauce

I liked this, my 4 yr old did too. I had to use up some sour cream. Made this along with the sherry sour cream chicken and some basmati rice. Yep a bit on the creamy side, but well it was mmmmmm mmmmm GOOD! Try it!

Grandma's Vegetable Soup

EAsy recipe, still recovering from a cold and had lots of veggies to use. I also used a 46 oz jar of low sodium v8. Added some italian seasonings, cayenne pepper (trying to kick this sore throat), and various veggies that included mushrooms, canned green beans, edamame, canned corn, carrots, onions, celery, zucchini and some red peppers. I also had to thin it out a bit with a can of veggie broth. YUM. It made a lot of soup, but thank goodness it's not too hot yet to still eat it. FYI--cayenne pepper was only a pinch, it adds a kick to it but helps cures sore throats!

Taco Seasoning I

very good. Easy to make. I double the batch and store it in a mason jar. Whenever we have tacos, I have my spice made ready to go. I use about 2-3 tbsp after I brown my meat, along with a little water (about 1/4c or 1/3c) to help it all blend in. I brought some leftover meat to our girl's night in and we made nachos. My friends loved the seasoning, saying that it wasn't too salty nor spicy. THANKS!

Baked Pears

Love this recipe. I made this for a quick dessert on Christmas day, as well as tonight. I love this simplicity of this recipe, as you could tweak your taste buds. I used Orange marmalade once and tonight, I tried one half with strawberry jam--YUM. Thanks for the recipe, easy to do and my 4 yr old LOVES these pears. *UPDATE* made this recipe three more times, I love this dessert, it's so yummy and healthy too!

Hot Dog Noodle Casserole

I made this with turkey hot dogs and used low sodium canned soup. Added mushrooms and some grn bell peppers for color. I also used whole wheat ziti pasta (that's all I had). Worked out well, I'll try this again. My 4 yr old loved it and said, mmm mommy, this is yummy!
