I thought this cake was OK, but very sweet and tasted artificial. I ususally don't bake with cake mixes, so that may be why I didn't care for it. The frosting didn't spread well for me even though I tried to drain the strawberries thoroughly. My kids, however, loved it. They thought that a pink cake with pink frosting was the best. Although the cake wasn't bad, I don't think I will make it again given all the other excellent ways to use strawberries in desserts.

Broccoli and Tortellini Salad

This is a very good salad that was well-received at a recent dinner I hosted. Like many reviewers I cut the sugar by half and used less onion. I also didn't have raisins on hand so I used craisins, but I think golden raisins would've been even better. I wish I'd made a little more dressing or saved some to add right before serving.

Vietnamese Fresh Spring Rolls

I've made these a couple of times and they are so good, just like the Vietnamese restaurant we used to go to in St. Paul (Hoa Bien). A few changes I make include omitting the mint, using regular basil from my garden, adding shredded carrot, and increasing the amount of shrimp. While I love the spring rolls, none of us cared for the sauces. I have to keep looking for the perfect peanut sauce.

Chinese Chicken Rice Salad

This was OK, but seemed to be missing something. I definitely think the dish improved after refrigeration, but I don't want to make it again. I tried adding cashews after eating a few bites and that helped a little.

Fruit Pizza I

I thought this was excellent. I am glad I found a recipe for fruit pizza from scratch. I never use store bought dough. I topped mine with grapes, strawberries and kiwi. It looked very pretty, was easy to serve, and well liked by everyone.

Win's Shrimp and Spaghetti

It doesn't get much easier than this! Very simple and very delicious. I only used 1/2 cup butter and that was plenty for my taste. I might use even less next time.

Sweet Cottage Cheese and Bananas

I'm sorry, but my son and I couldn't even eat this. And cottage cheese and bananas are among his favorite foods! I couldn't understand why he wouldn't eat it until I tried it. I was surprised after all the good reviews.

Nutty Stuffed Mushrooms

I made these for New Year's Eve in regular size mushrooms (to be bite-sized) and they were easy to make and gone quickly. I used Italian style bread crumbs. I liked that this recipe didn't call for meat or seafood.

Coconut Tilapia with Apricot Dipping Sauce

I made this for dinner last night and wish I could give it 10 STARS! It was excellent and we loved the sauce, even though I used peach preserves. I recommend unsweetened coconut since the dipping sauce is sweet enough. What little was left over reheated well today. Thank you for one of the best fish recipes I've ever tried!!

Tiramisu Layer Cake

I've made this twice and it's excellent. The second time I made it I had to use 8 inch pans and I thought it looked better. I also didn't add the cream to the filling and found the filling easier to use and the layers didn't slide. The only other change I made was to decrease the whipped cream frosting by half; I still felt there was plenty. Thanks for an awesome cake recipe!

Cinnamon Sugar Crisps

Couldn't be easier or faster or better! Just be sure to watch them for the last minute or so, they might need to come out earlier than 5 minutes. My 2 year old loved these.

Chocolate Decadence Yule Log

I can only rate and comment on the cake part because I used a whipped cream filling and a stovetop chocolate frosting recipe (from Allrecipes). The cake tastes great, but compared to other roll cake recipes I've made this was harder to work with. A little extra care and lots of frosting hides most defects.

Salmon Chowder

My husband and I love this soup. Like many other reviewers, I highly recommend fresh salmon over canned and fresh garlic instead of powdered. I also decrease the cheddar cheese by about half and I plan to try reduced fat evaporated milk next time. My kids wouldn't eat this, but I don't think they even tried it.

Chocolate Frosting II

I just used 2 batches of this recipe to frost my Yule Log. It looks nice and tastes very good. It's easy to adjust the amount of milk for the consistency you need. I changed just a few things: I used 1/2T vanilla, 1/3C cocoa, and 2 1/2 C conf. sugar. I didn't measure the milk, but needed more than in the recipe. This will be my chocolate frosting recipe from now on!

Ultimo's No-Bake Blueberry Squares

My family loves this dessert. I have made it twice, once with frozen wild blueberries and once with fresh chopped strawberries. Both ways were very good. I only use 1/2 cup sugar in the topping and none in the crust and it's still very sweet.

Chicken Newburg

I thought this was bland and boring. I haven't made anything "Newburg" before so maybe I just don't care for the flavors. If you make this, be sure to have all ingredients ready ahead of time...the cooking goes fast.

Cream of Fresh Asparagus Soup II

Asparagus is my all-time favorite vegetable and I loved it in this soup. It was so easy to make for a quick lunch. My husband liked it too. It turns out to be a pretty color green too.
