Banana Shake

Overall good taste, but I thought it was VERY sweet. Could be because I had overripe bananas. My almost 2 year old didn't care for it, possibly because of the sweetness. He likes plain yogurt by itself, so he may not be the best judge for children's tastes

Fabulous Homemade Bread

This is a fabulous recipe. I bake a LOT of bread. Whole wheat, white, you name it I've probably tried to bake it. This recipe is so versatile. I've substituted molasses with a little sugar, honey, extra wheat flour, extra oats, flax seed, I think you get the idea. The one trick I have discovered with bread making is to use cooking spray to roll out your dough. The more flour you add, the tougher it gets, so I make my dough in my bosch and when it comes off the side while "kneading", I put the still sticky dough in the oiled bowl, let it rise and dump it out on a sprayed board and roll it out and up into loaves. PERFECT every time!

Marinated Cherry Tomato Salad

This was VERY good. I used raw organic apple cider vinegar, about 1 1/2 tbsp olive oil and kept everything else the same. We loved it! My husband who has heartburn and doesn't go for a second helping of tomatoes went for thirds! Thanks!

Honey Butter

We absolutely loved this. Tasted just like the honey butter we get at Texas Roadhouse. I softened my butter by nuking it 5 seconds on each side in a small mixing bowl. Then I whipped it and added the honey (wildflower) and a little bit of cinnamon. Thank you very much!

Irish Ginger Snaps

These cookies turned out o.k. but not much flavor. I had to add about 1/4 cup of water to make it hold together and it took 9 minutes in my oven.

Bran Flax Muffins

Very good recipe. I found it to be sweet, but then I substituted All bran cereal for the bran (which the cereal is sweet) and a can of well drained crushed pineapple for the carrots (I was out of bran and did not feel like grating 2 cups of carrots!). I also forgot the baking soda, but the muffins turned out - a little extra moist- but good nevertheless. My 11 year old son absolutely loves these, and would eat the whole batch if he could for a meal. If I were to do the recipe again, I would probably cut the brown sugar in half and remember the baking soda, so the muffins would rise. Also, I got 24 muffins out the recipe, but I'm not complaining! The more the merrier!

Caramelized Baked Chicken

Delicious Black Bean Burritos

This was very good. My family just gobbled them up. I did substitute whole wheat tortillas for flour, olive oil for vegetable, whole red pepper instead of half, cooked dry beans (add about 1 teaspoon salt per recipe batch), 2 teaspoons minced jalapenos, 1 tablespoon dried cilantro and 1 tsp cumin. I will definitely make this again! Thanks Jessie!

Spanish Rice II

My family loved it. I did substitute chix broth for water, a yellow pepper for the green pepper (Hubby hates green peppers), I didn't have diced tomatos with chilis, so I added 1/2 tsp cayenne pepper. I also used brown rice instead of white and olive oil instead of vegetable. Definitely will be making this again. Oh! This makes a lot! I doubled it and there was at least half of what I had made left. Great for leftovers... Hubby put it in a whole wheat taco shell and enjoyed it that way too.

Smushed Apples and Sweet Potatoes

As someone who really doesn't like sweet potatoes, this dish was pretty good. The apple helped immensely. It didn't taste exactly like apple pie, but then I did make a few alterations. I put a little less than 1/4 cup of splenda with about a tablespoon of molasses. I also added about 1/2 cup of pecans when I finished beating it. The rest I kept the same. Next time I might substitute unsweetened applesauce for the apples and see if that doesn't make a smoother texture. The fact that there will be a next time is saying a lot for me! Thank you for this recipe. It will help me to get more of an excellent source of nutrition into my diet.

Nutritious Lentil Salad

This is a pretty tasty salad with the addition of 1 tsp cilantro. I added paprika first to zip it up, but that didn't cut it. I then added the cilantro, which helped immensely. I also cut the green olives back to 1 cup. I find green olives repulsive and couldn't imagine eating something that tasted mostly like green olives. I will more than likely make this again.

World's Best Peanut Butter Fudge

I always thought my Grandmother made the best peanut butter fudge. I have tried many times to make it and others, but they NEVER ever turned out. This fudge turned out perfectly (followed instructions to the letter)and we think it's even better than my grandmother's who stands over a stove for over an hour making hers! Thank you so much! We love it! Definitely a keeper!

Leftover Roast Chicken Soup

I'm giving this a 4 because I really didn't care for it the first night or the green beans in it either. However, this is one of those recipes that gets better as a leftover. I did add a LOT of salt (probably 2 tbsp) to it as I am a salt freak but I still thought it was bland the first night. Hubby and son liked it, surprisingly, as neither are chicken lovers. I heated it up 3 days later and it was really good. The flavors had really come together. Thanks Nikki, I will use this again.

Butterscotch Oatmeal

Sweet Potato Casserole II

My brother and I hate sweet potato casserole, but usually I go down to my Mother in Law's house for thanksgiving and Hubby gets Sweet Potato Casserole, so I had to make it this year. I was only going to make a half batch, but I am so glad I didn't. I made it for Thanksgiving and my brother (who gags at the thought of Sweet Potatos and has even thrown up after eating one) loved this dish. My Sister in Law somehow convinced him to try them and he had *4* helpings! There was barely enough for hubby and my Mom to have a second helping! I tasted it myself and thought it was pretty good for a sweet potato! I made it again this past weekend and it turned out beautifully again! Thanks for a great recipe!

Delightful Apple Spice Muffins

I woke up late on Saturday and made these bars with 1 cup of butter instead of 1/2 cup. They still turned out fine. I put them in a regular muffin tin with liners and baked them for 20 - 22 minutes. I let them sit (I realized half way through baking them what I had done, because I was trying to figure out why I had so much batter left) for about 20 minutes and they tasted fine. Pretty greasy... but my family loves butter. I know next time they will turn out great when I bake them right.

Truck-Stop Buttermilk Pancakes

These are the BEST pancakes I have ever eaten. Usually I like to drown my pancakes in my homemade apple syrup, but these were awesome with a minimal amount of syrup. I made these last week, substituting milk and lemon juice for the buttermilk. It did not work, not sure if that was because of my error or whatever. In any case, I made it as stated today and they were perfect. I also scaled the recipe down to 9.6 servings to get equal eggs, etc. I really can't say enough about these, this recipe will be my pancake recipe from now on. You can also scale to 7.2 (3 eggs, 3 flour, 3 buttermilk, etc.); 4.8 (2 eggs, 2 flour, 2 buttermilk); 2.4 (1 egg, 1 flour, 1 buttermilk). Thank you for contributing! My family and I thank you very much!

Easy Granola Bars

I found this recipe a few months ago, printed it up and have been making it quite frequently. I lost my print out, and came back for another copy! I would be lost without this recipe. It turns out perfect every time, with all the different varieties I have done! The 2 recipes that are requested the most are a mix of 1 c raisins, 1 c sunflower seeds, 1 c coconut and 2 c of mixed dried fruit, 1 c sunflower seeds, 1 c coconut. Thank you so much for contributing this recipe Aliceyn! My family and I greatly appreciate it.

Molasses Oat Bran Bread

Unfortunately, I read the reviews after I started making it, and decided to make rolls with the dough. I really don't know what to say, except this is the worst recipe I have ever worked with. I'm eating a roll now, and they are hard, hardly rose or anything. I've made a lot of bread and unless you have experience in fixing recipes, I wouldn't bother with this one.

Bean Quesadillas
