31 year old former vegetarian living with a husband who doesn't like anything green, foreign or containing the word squash. It's OK to feel sorry for me! To compound the matter, I am from the South, but living in the North. "What do you MEAN you don't have sweet tea?!?"

I am known as the Casserole Princess. =) "If you can bake it, I'm there." I also like to try out many "ethnic" foods. I absolutely LOVE Ethiopian and Thai!

I get my royal title from my Mother, the Casserole Queen.

Though many claim it to be terribly difficult, I am actually GOOD at making potato latke's!
My cooking tragedies
Once, while heating a dry Indian spice mixture in a pan, I stopped stirring (for only a moment, I swear!) and it puffed up into my face. I thought I was going to lose a lung!

Baked French Fries I
Do not cut them much larger than a regular french fry from a fast food restaurant. Dunk them in ice water to get them very stiff. Bake at 400 for 30 mins then crank it up to 500 for another 5 mins or so to get them really crispy. The seasonings are perfect just the way they are!

Spaghetti With Peanut Butter Sauce
I used lo mein because I didn't have spaghetti. Likewise, I also used heavy whipped cream out of a spray can, reduced fat peanut butter, and regular soy sauce. Even with all the forced changes, it was still really good. It definitely needed some crushed peanuts, though. Thanks for the easy (and forgiving) recipe!
