Peppered Rib Eye Roast

I would really go 3 1/2 stars on this... The flavor is outstanding. (I crushed the peppercorns with a meat mallet after putting them in a zippy bag and wrapping in a dish towel) But the time and temp was way to much---DRY!!! Next time I'll pay more attention to how it's cooking. But major props for the flavor.

Butter Bean Veggie Soup

This was easy peasy!! I am amazed how easy it was, but it was good nonetheless. I used chopped green onion instead of a whiteonion and I threw in some leftover shredded turkey breast. ---A pretty mindless recipe for those days when thinking is already too much of a chore!

Slow Cooker Lentils and Sausage

I think I must not be a "lentil person." I had this one night with hubby kids and brother and sister in law. Brother in law really raved--said it tasted just like a lentil soup he gets at Carrabas. Hubby liked it---but he likes anything. Sis in law liked it---but was she being polite??? Kids only ate the sausge out of it. As for me...not my cup of tea, but I think the recipe was a good one and very solid. I'm just not a lentil person, I guess.

Cheesy Acorn Squash

We really enjoyed this. I forgot to cover when I put it in the oven but I think that helped the toppings retain their crunchiness. (Which I liked) It was super easy and very satisfying so we will be making this one often!! Thanks!

Spaghetti Squash I

Wow!!! This was really good. My first experience cooking or eating spaghetti squash. What a cool vegetable! It's amazing how it comes out just like angel hair pasta!! I have always subscribed to the theory that all is better with feta and this is no exception!! I added some grilled chicken strips per others advice as well as a couple handfuls of fresh sugar snap peas. (Added lots of color and a yummy crunch!) I'm just really excited about learning about this neat-o vegetable!

Slow Cooker Adobo Chicken

Hmmm... I'm missing something with this one. It just tastes like chicken and soy sauce. I guess I was expecting a magnificent transformation.--Didn't get it. It was easy, that's good I guess. I don't think I'll be doing this one again.

Spiced Butternut Squash Soup

This was pretty good. I like the fact that it is made with a healthy vegetable that doesn't often make its way to my table. I'm sure this is blasphemous but I didn't include the half and half or milk. When I got to that stage I just didn't think it needed it. The consistency is really pleasant without it. I served it for lunch on a "waiting for snow day." I served with a crusty bread, good hard cheese and sliced apple.

Russian Cabbage Borscht

My 10 year old daughter is a soup lover so she wanted to try this. Husband really liked it and kept going on and on. 10 yr. old ate the entire bowl!! (small victory for Mommy) I really think the caraway seeds and dill are essential to this meal. Very hearty...will make this again.

Simple Whole Roasted Chicken

If I could give this 100 stars I would. It's seems like such an odd combo of flavors, but they really work. The whole chicken was full of flavor not just the skin. I have a house full of kids and a discriminating husband and everyone said this was the best chicken they had ever had. Even though the spices seem very "autumn" I do not feel like this is a dish that needs to be at all limited to the fall or winter months. We will have this over and over again.

Round Steak Sauerbraten

This was really easy and pretty good. Next time I think I'll add more vinegar and brown sugar. I didn't have any onion powder so I sliced then halfed an onion. My kids actually liked this a lot. ---I served it over rice.

Basic Vegetable Stock

This was really excellent. (it smelled so good cooking) I felt like my soup started so much healthier without having to use boullion or store bought broth that is so high in sodium and preservatives. Sauteeing everything first really intensifies the flavor, and the olive oil really lends something to the broth. (Did need more than 1 tablespoon of olive oil, however.---Maybe I used too large of a pot)

Owen's Mozzarella And Tomato Salad

I used cherry tomatoes cut in half. Overall it was a very fresh, clean taste. I would add a bit more salt next time, though. The fresh basil was so wonderful.

Alyson's Broccoli Salad

This was really good. I'm usually not a big fan of raisins, but I didn't mind themat all in this. I was surprised the raves I got from this because it was so simple. My mother-in -law said that she was going to have me make the broccoli salad from now on. (High praise indeed)

Coleslaw with Peas

I'm not a huge fan of coleslaw but I needed a recipe to use up a bag of shredded cabbage I had. I chose this because I thought the peas would add a little extra nutrition for my kids. It was actually pretty good. The recipe did not specify type of mustard to use and I only had yellow, so I used that. Maybe next time I'll try brown. The peanuts added a great crunch and the peas added nice color. (I left the peanuts whole.) I will use this in place of any other coleslaw recipe if the I need to make coleslaw again arises.

Roasted Chickpeas

This was very unique and tasty. We seasoned with a little cayenne pepper and garlic salt. At 20 minutes in the oven they were done, so watch the time if you have a hot oven. Will make again and experiment with different seasonings.

Braised Balsamic Chicken

This was wonderful for so many reasons.--1)Very Easy, 2)Smells glorious, 3)Looks incredible, 4)Tastes great--and not rhe same old chicken recipe. I used diced roma tomatoes because I was out of canned and they worked wonderfully, in fact would recommend it over the canned variety. I ended up making a 10 serving portion to bring to church and the oohs and ahhs were plentiful!! Will make again soon.

T's Easy Chicken

I'm always looking for recipes that go off quickly without a hitch---This is surely one of them. I Used fresh Roma tomatoes and snipped some fresh Italian parsley. Served with tortellini. MMMMM...good!!

Tiny Chicken Turnovers

This turned out looking pretty impressive. My family really liked it, (especially the kids) although I thought it tended to the dry and bland side. Nezt time I will season the filling a lot more.---I agree it was difficult, however I got a lot better at it as I went along. I guess you need to get in there and play around to figure out exactly how to do it. Will defiantly try again.

Fresh Tomato Pie

I really thought this was bad. The crust was gummy because of the excess moisture of the tomatoes and the cheese/mayo mixture was an odd consistency with a weird taste.

Leftover Chicken Croquettes

I thought this was very good. I used my mini chopper to get the onion and chicken chopped fine enough. We served it with sour cream. My one complaint is it didn't hold it's form once you cut into it as well as I had hoped. Still great though.
