Brussels Sprouts With Franks

Pretty good--healthy way to use up hot dogs. I didn't have any v-8 (I thought I did)so I used tomato puree and shook some hot sauce in it. Close enough. Surprisingly good actually. It could really be good with some parmesan cheese on top. I served it over whole wheat penne pasta.

Caterpillar Cake

This was so great!! What are the chances I'd actually find a caterpillar cake when I looked for one. I used a bundt pan that had angular peaks in it (because that's all I had!) but it came out well!! I modeled mine after Eric Carle's "Very Hungry Caterpillar" and used it for my baby's 1st birthday.

Easy Eggplant Pita

This was a pretty good dish. I used 4 fresh cloves of garlic (minced) instead of the powder. I also threw in a couple of handfuls of broccoli florets. (The color is kinda blah without them. My husband suggested that if you want ranch dressing on it, to lightly spread it on one side of the open pita before you fill it. That way you will have the ranch taste all the way through and not just the first bite or so. For those of you who had problems with sogginess, I wonder if you had too much oil---mine was a fine consistency.

Healing Cabbage Soup

My sweet husband has a horrible summer cold so I looked this up. I made it for his lunch today and he really enjoyed it. It's a simple soup which is just what is needed when you are not feeling well. The only canned tomatoes I had was a can of tomato and okra put out by "Glory." The tomatoes had some spice already and it really complimented the flavor of the soup. I would recommend anyone who can find "Glory" canned vegetables at your supermarket to try this soup with the okra and tomatoes. Thanks for sharing this great recipe!!

Twice Baked Potatoes I

This recipe is a good starting point. It must have more seasoning or it will taste like baby food potatoes!! I added scallions and some sour cream to mine. It is better to undercook the potatoes the first time a little so you can really control the amt. of pulp you scoop out without tearing the skin. When you bake them the second time anything under cook will be perfect. This will ensure your potatoes don't dry out as well.

Asparagus and Cashews

Mmmmmmmmmmm--This was so delicious!! I cut the amt. of oil as well, but kept everything else as the recipe stated. Such a great combo of flavors. This will go into my regular rotation!!

Potato Chips

I just don't get what all of the fuss was about. I made several batches. They either came out soft like a hashbrown potato or really chewy.--not crispy at all. I used a mandolin to cut them. I'm not really sure what the problem was. The softer ones were decent tasting---but NOT potato chips. Maybe its my microwave or the plate I used. I used a corelle type of plate.

Apricot Glazed Chicken

This was really good and easy to make. All of the kids liked it and so does the husband. (I do not have a sweet tooth, but did not find it too sweet) It was easy to make a lot of, and I will keep this in mind if I have to bring a meal to someone in the future.

Brilliant Sauteed Broccoli

I am rating this based purely on the technique because I seasoned according to my kids preference. I have been looking for a good way to cook broccoli based on the most delicious brocoli served at a popular chain resturaunt. This comes close--but is it just me or does this require an awful lot of dirty dishes to make one side dish???

Roasted New Potatoes

This was not bad, but not the best roasted potato recipe. I may increase the amt. of the rosemary and thyme next time. Two crucial steps left out of the instructions: 1. Even with the oil, spray a thin coat of Pam on your baking sheet to help prevent sticking. 2. You MUST periodically flip these over while cooking. They brown very fast and you want to ensure crispiness all the way around.

Bandito Chicken Wings

I doubled this recipe---it was very good. Not just your average barbeque recipe. The taco sauce and french dressing really spiced things up without making them "spicey." My kids loved them but the flavor was complex enough that the adults loved them too.

Chinese Roast Pork

Yum---This was really good!!!! I followed the recipe to the letter (except I used boneless pork roast because I couldn't find one with bone in)It was perfect!! Just like you get at the resturaunts. I will make this again and again. The kids even were eating it like it was dessert!! GREAT RECIPE!!!!

These were really good and easy. The outside consistency was perfect. The inside was good, but I too, would try to tweak to give it more flavor. A really good "jumping off" point for egg rolls.

Pineapple Chicken Delight

This recipe gets points for ease. I had all of the ingredients on hand. I used baby yellow and red bell peppers instead of the green and I omitted the potatoes. (I served this with rice balls) It was good, the kids liked it, but at the end of the day it was just chicken with barbecue sauce and pineapples poured over it.

Artichoke Rice Salad

This was very good...I used a baby yellow, baby orange and baby red bell in place of the green bell. It was a yummy salad, full of crunchy goodies. I. too halved the mayo and doubled the curry. (that suited my tastes just fine) It really matures as it sits in the fridge.

Corned Beef and Cabbage

I actually had to convert this recipe to serve 10. (which I was little nervous about) I have a huge crock pot, but after I cut the two briskets up, I didn't have room for the cabbage and potatoes. I followed the ingredients (after the conversions) exactly and when the brisket was done, I took some of the liquid from the crock pot and did my cabbage on the stove. My first time cooking corned beef---I didn't even really know what to expect!! It was really good. I expected out of 7 lbs. of corned beef that I would have some leftover, but there was none!! After everyone ate, they just sat at the table and picked at the platter as we talked. I couldn't believe it was all gone!! Who knew!!! Thanks for the recipe!!

Turkey with Mushroom Sauce

This is really good for a slow cooker recipe. Often with slow cooker food, meat (or poultry etc.) can come out tasting boiled. This actually had a crisp to it! I used sherry and fresh sliced portabella. The gravy was dark and rich. The ease and taste make this a worth while recipe.

No Beans About It - Chili

My son's preschool has an annual "hot dogs with dad supper." The only thing left on the sign up sheet was a crock pot of chili so I thought I'd better test this out before I subjected all of those 3 and 4 year olds and their daddies. I made this for about 10 people for dinner. (to go with hot dogs) It got nothing but rave reviews from everyone--young and old. It's not spicy (which is really good for my needs) but had a lot of flavor. My husband said this is the only chili recipe he didn't feel the need to add a bunch of ketchup to. So a success indeed. It will be making its debut at the preschool in a few weeks!!

Beth's Scalloped Cabbage

This was good---Like Mac-&-cheese, but with cabbage. I thought I had ritz crackers but I didn't so I used Italian bread crumbs in place and it was delish. (Chedder instead of American) The sauce did get a tad watered down (Water from the cabbage, I'm guessing) so I think next time I'll give my cooked cabbage a little squeeze with some paper towel before transferring to casserole dish. This will be made again, Im sure, as my 3 oldest kids (aged 4-10)gobbled this up.
