Sourdough Bread III

I can't believe *I* made this! This recipe gives you one amazing loaf - w/ a thick, flavorful crust outside and a light, fluffy bread tucked away inside. Although I used a young starter (only 5 days old), I got a distinct sourdough flavor for my effort. My only deviations from the recipe as written were to (1) break the dough up into 2 loaves & bake in loaf pans for 30 minutes each @ 375 and (2) I brushed olive oil over the tops & sprinkled w/ diced onion. This recipe will be around for a long time - can't wait to try it once my starter is even further established.

Banana Banana Bread

I made this bread after scoring 2 giant bunches of overripe bananas from the grocery store. The only modifications I made were to add 1/3 cup chopped walnuts to the batter and some to the top of the loaf before baking; I used 2 disposable 8X3 loaf pans - baking at the recommended temp for 45 minutes, giving me perfectly sized slices for snacking on this yummy, dense banana bread. I also dusted the loaf pans with sugar after buttering, for a slightly sweetened crust. Fantastic recipe!

Slow Cooker Split Pea Sausage Soup

This one passed the kid test. Even the picky youngest one loves it, although the word 'pea' is never used in conjunction with this meal. It's the "green soup" the kids request. I'll admit the look is never appetizing to any of us, but we've come to trust the taste. Very good!

Creamy Chicken and Wild Rice Soup

I wish I could give this more stars! I couldn't find the quick cook rice called for so I used Mahatmas Long Grain & Wild Rice. The recipe calls for reserving the spice packet to be mixed with the roux, but since Mahatmas combines the rice with the spices I couldn't. I just cooked the rice, spices and all, and added it to the soup. I added onion, carrots, corn, a dash of garlic powder and the flavor was sooo good! Last thing: I mistakenly grabbed half/half instead of heaving cream, and still the soup was perfectly thick. And delicious! You cannot go wrong with this recipe. Try it!

Navy Bean Soup I

I never seem to have ham on hand when I want to make this soup, so instead of ham I've used smoked sausage with very good results. Delish! Served with Portuguese Sweet Bread from this site, it makes for a great rainy day meal.

Morning Glory Muffins I

You may think the batter is too thick, but trust the recipe! I was tempted to add some applesauce to the batter after it was all combined, but resisted the urge and I'm glad I did. These muffins were delicious. The only changes I made were to use dried cranberry instead of raisins and I added about a 1/4 c. of flax for additional nutritional benefit. Great, guilt free muffins! Thanks.

Cowboy Mashed Potatoes

Personally, I really liked these. I think I could have eaten the entire pot myself. ;) Hubby liked them too. The younger kids on the other hand weren't fans. At all. So, these are relegated to the grown up dinners. Maybe with steak and mushrooms? Yum.

These were good, but I thought the flavor of the chips kind of overpowered the flavor of the cookies. I'll make these agai, next time just reducing the amount of the chips a bit.

Beth's Spicy Oatmeal Raisin Cookies

I made up a very large batch of these to send with my husband to work one day for a potluck lunch and he says they were gone before he even got one! I've had similar results in the house. Everyone loves these. All I ever have is whole cloves so I crush between 6-8 to get the 1 tsp (for doubled batch) using a mortar & pestle. Great recipe. Thanks!

Best Brownies

So good! I've made these with & without the glaze and actually prefer them without. They're midway between cakey and fudgy and just made us all say yum. My 12 year old daughter made these on her own one night and aced them! She thanks you for a simple, yummy recipe too!

Bread Machine Bagels

I made these Saturday and the house is already asking for more! The bagels are not difficult to make at all. They do require some effort, but don't all good foods? I'll never buy store bought again. I followed the recipe as closely as my ingredients allowed. We didn't have poppy seeds, so I omitted those with no ill effect. Also, we have no cornmeal, so I just sprayed the cookies sheet with cooking spray and they came out beautifully. Thanks for a great recipe!

Good Ol' Alabama Sweet Tea

My daughter and I love this tea. Make no mistake, this tea is heavy on the sweet! I've cut the sugar down to 1 1/2 cups and *still* get a very sweet, tasty tea. Don't worry if you don't have orange-pekoe tea on hand - I've made this using 7 regular sized Liptons Natural Tea and the results were very still very good.

Light Oat Bread

Good bread. I subbed olive oil for the margarine and prepared the dough using the dough cycle of my bread machine, pulled it out and let it rest for 10 minutes, shaped it for my loaf pan and allowed it to rise to 30 minutes before baking @ 350 for 30 minutes. This resulted in a perfect loaf of good , hearty bread.

Portuguese Sweet Bread I

I'd give this more stars if I could. This is hands down the best bread I've ever made. Or tasted. I've made this twice now. My first batch was very heavy, dense bread but still very, very tasty. I had added a bit of honey to the dough. My second batch was followed to the recipe's T and was perfection. I made the dough in the machine, then pulled it out and place it on a cookie sheet. I gave me a very pretty, high loaf. Great recipe.

Fluffy Pancakes

I wanted something to have on hand for these summer days when all the seem to kids crawl out of bed at different times, so I scaled this recipe to 24 servings, prepared them, and tossed them all in freezer bags to be frozen 'til ready to eat. I got about 48 pancakes out of this recipe, using 1/4 c. serving size. The only change I made was to have used applesauce in place of the shortening. I also made a smaller batch using applebutter instead and those also came out very well. Good recipe. Thanks!
