Chicken Enchiladas I
Great recipe! I did modify slightly for my family's tastes and based on several reviews. Used salsa instead of tomato sauce/water and used enc. sauce instead of taco. Also added lots of fresh cilantro. Thanks for a great base recipe!

Cinnamon-Peach Cottage Cheese Pancakes
Great option for pancakes! I subbed Mango-Peach-Apricot spread for the peach and left out the sugar. Also added a few tablespoons of flaxseed. Much healthier!

Jamie's Minestrone
This is the best vegetable soup I have ever tasted! My 10, 8, and 5 year old boys even loved it! Only change was to add white beans and a little cayenne pepper! Great on a cold, wet, fall day!
