Chicken Enchilada Soup II

This was a really good recipe! It's about as close as you can get to Chili's, although I admit it's not exact. I worked there for a year about ten years ago and ate it every day, so maybe I'm biased, but the recipe is still really really good and probably is as close as humanly possible.

Zuppa Toscana

Really there's no need to head to Olive Garden every time you're after this soup. I've made this recipe a million times over and you just can't tell the difference in the taste. The great thing about making it at home, is that now that we're eating healthier, it's so easy to modify to fit that. I either leave out the bacon, or just use a few slices, use lo-fat milk instead of cream, and sometimes use 1/2 sausage and 1/2 ground turkey. And FYI, whether you're making it exactly like the recipe or a lo-cal version, spinach is fabulous in place of kale and much easier to find!

Rainbow Veggie Chili

My husband and I are not Vegans, but had been on a voluntary "fast" with our church that had us eating only foods eaten by Vegans, with a few more restrictions. I found this recipe and we both really liked it. Be warned, it is SPICY, but really good. The next time I'd probably cut some of the ingredients that make it so hot, since my kids couldn't eat it, but other than that it's great. I actually served it over brown rice.

I just didn't get this recipe. I made it exactly how the recipe states, I am a pretty good cook, and none of us liked it much. I've tasted much better oriental recipes than this one.

Creamy Vegan Corn Chowder

Absolutely amazing!! I'm not a Vegan, but was invited on a "fast" with my church that prohibited foods that weren't on a Vegan diet. It was really hard, but this recipe really squashed a lot of those cravings I had for other foods. I used soy milk, and unless I were to taste chowders side by side, I could NOT tell that it used soy milk (and I don't even LIKE soy milk!). I strongly recommend this recipe to anyone, Vegan or not.

Honey Peanut Granola

Really good! I was on a strict diet and couldn't have sugar, just honey, so I substituted all the sugar for honey, added peanuts, and it turned out great. Next timed I'll add a variety of nuts and dried fruit too.

Cheesy Potato and Corn Chowder

Yum. That about sums it up! I've made it once using velveeta and once using shredded colby/jack. All of us prefer the shredded cheese versus the processed. It's good either way though.

Salisbury Steak

This is great. I've made it a couple times now, although I must admit it tastes more to me like meatloaf. My husband, who has never cared for meatloaf, actually really likes this because it differs from meatloaf in that it's not sweet at all. Definitely a keeper.

Pesto Chicken Florentine

This is great! I was really skeptical about it because of the powdered alfredo sauce mix, since I usually make alfredo sauce from scratch. Me, my husband, and the kids (both toddlers) loved it! I'll actually make it again the same way. Alfredo usually sits heavy on our stomachs, but the powdered mix gave it a lighter flavor. It's definitely a keeper!

Awesome Honey Pecan Pork Chops

This was really good! I made the pork chops and sauce per recipe and I must add that after tasting it, I thought it was too sweet. However, I ended up putting it over rice and it mellowed the sweetness and was perfect along with a lettuce salad. I will definitely be making it again(with the rice)!

Extreme Banana Nut Bread 'EBNB'

I don't generally make banana bread, simply because every recipe I've used tends to run on the dry side, but this one is amazing! It was so moist and even my 18month old loved it. This is one I will be using time and again.

Beth's Spicy Oatmeal Raisin Cookies

These cookies are simply fabulous! I'm not a big fan of oatmeal raisin cookies, but because I was pregnant when I first made this recipe, I had an odd craving for them. Maybe I've just been eating crappy ORC cookies, cause I love these and still make them even though I'm no longer pregnant. The hubby and 15 month old love them too!

Baklava

After making this, I realize that I'm not a baklava fan(I'd never had it before). However, I made it for a party and everyone RAVED over it, hence the five stars. If you love baklava, you'll love this recipe. If you don't like baklava, don't expect the recipe to change things...
